How can I search for the servo arm on the left sir ? I love the idea

Any large round servo arm will work as long as it fits on the servo. Mine weren't large enough diameter so I joined two together. You could just fashion the shape from 1/8" plywood or something similar and mount it to any sero arm you have.

How does the switch control the servo ?

The switch doesn't control a servo. It controls the retract motor which is just a brushed two wire motor. The servo moves a DPDT momentary switch. One direction runs the motor one way to raise the retract. The other direction reverses the polarity of the two wires and moves the retract in the opposite direction.
