    I had an epiphany the day I realized cooking at home was not only cheaper, healthier, more delicious because you can tailor it to your personal taste, but also so enjoyable! I literally look forward to what I cooked!

    Floreine-Jemima Joseph "More delicious" exactly, I don't understand when people call fast food delicious, to me I only eat fast food if I have no other choice, its sad that people think healthy food is not delicious.

    I don't get her opinion about indian food. Once you understand the basics of indian food, you can fill your pantry with 15$ of spices and cut your food expenses to basically nothing. Stock you pantry with potatoes, onions, garlic, ginger canned tomatoes, dried chickpeas/lentils and rice. Then go out and buy whatever vegetable is seasonal/frozen and cheap and effortlessly eat like a king for very little money.

    I'm glad someone said this! Because of my well-stocked spice & lentil cabinet, my weekly grocery budget for one is about 25 dollars and all I buy is produce, bread, and eggs. Bulk buy potatoes, ginger, onions, garlic, canned tomatoes, dried lentils and rice every 3-4 months, and you're basically set. Indian food is so much easier than people think, plus amazing for vegetarians who are sick of meat substitutes and flavorless salads. Admittedly my Indian heritage gives me more familiarity with Indian home cooking than many Americans, but it's so much more than time-consuming butter chicken and garlic naan recipes - there's a whole world of cheap, nutritious and flavorful recipes out there!!

    @@priyabuddhavarapu it's okay. I'm not even indian and I get it. The unique thing about indian cuisine seems to be its focus on simple veg dishes. A lot of cuisines from middle eastern to italian have dishes like that but none to the same extent.

    Real Parmesan that you buy in a brick in the deli section is hands down the best grocery splurge. Makes even the simplest pastas taste restaurant quality and there are so many easy pasta sauces you can make with parm on its own (see basically’s pasta al limone)

    You could save further by purchasing grana padano, which is literally the same cheese made in the next town over. It's just not stamped with the DOP.

    Instant Pots usually have a saute function which allows you to cook your onions the way you normally would in a regular pot before you pressurize it. That way you still get to keep a lot of the flavour! Love my instant pot it changed my meal prep game, especially for soup! I also love TFD and have been following you guys for years! Thank you for creating such great content. :)

    Amen! You can sear meat or saute veggies before starting the slow cook. Works great. I love, love, love how easy it is to cook dry beans in the instant pot. No soak, no planning ahead, less than an hour and they are just done!

    Frozen veggies have a softer texture and aren't good for specific things but are super versatile, often more affordable, and healthier! totally agree they belong in your inventory.

    This is so encouraging. Mom Of three... and I hate dinner. It’s stressful. I’m back and forth nursing the baby, unloading the dishwasher, and running kids around. Looked up a bunch of her recipes. Place Walmart grocery pickup, and now prepping food! This is what I’ve been praying for. Thank you!

    *Summary of the relationship between Aldi and Trader Joe's:* *The original Aldi company was founded in Germany in the 20th century by two brothers but split into Aldi South and Aldi North when the brothers had a falling-out, purportedly over whether or not to sell cigarettes. "Aldi" is the American arm of Aldi South, while Trader Joe's is the American arm of Aldi North. That is why the two companies share so many similarities and stand out in the landscape of American supermarkets, but they are not owned by the same entity and are very much competitors.* *Also, cars are evil, and Trader Joe's parking lots are karmic punishment to car owners, of which I am technically one.     tokiobabe99 Aldi and Aldo are two separate businesses that are not interconnected in any way. We have Aldo in the USA as well. It’s usually in the malls and bigger cities.

    Love Beth! Her blog has been a game changer for our family. I have yet to make a bad recipe from he blog. So many of them have become staples for us (Oven Fajitas, Spinach Lasagna Roll Ups, Italian Wonderpot, Maple Dijon Chicken Thighs, Mini Garden Turkey Meatloaves).

    Chelsea months ago you posted a beef shortrib ragu on your insta and I used the list of ingredients to make it for my family on my birthday- it was phenomenonal and the only time I've seen my family full of food snobs silenced. So please keep doing it as your only follower who doesn't mind using your Instagrams as inspiration for recipes!

    If you have too much ginger, you can "pickle" it for later. Slice into sticks, cover in wine, bring to a boil, remove from heat and steep for a few hours or overnight. Pack in a jar and pour in the wine to cover. Can be eaten or used to cook with. The leftover wine can be added to many things, too, but it doesn't keep.

    Not sure if it's the same thing but in Japanese cuisine there's like a pink pickled ginger that's used a lot as garnish, it's called Gari. Tastes great (and I don't like pickled things like pickles or olives) and it really gives a pop of color to whatever dish you're serving.

    it also freezes. peel it, bung in freezer, grate as you need it. seems to last forever, and I don't notice the difference in the food.

    You can grate it and freeze it too. It gets "fluffy" so I double what the recipe calls for

    I grew up cooking homemade Chinese food. If you can stirfry, you can cook authentic chinese food. Heat up oil in a wok until it is almost smoking, put in some combination of garlic/scallion/ginger, add the stuff you want to sitrfry, and then season with some combination of salt, soy sauce and five spice powder. That's the formula for most Chinese stirfry. Also I agree with Chelsea, I will always splurge on Charmin toilet paper. XD

    To make meal prep more fun I entered the recipes in some of my cookbooks into a spreadsheet. Every week I cook new recipes with the goal of finishing the entire cookbook. My favorite recipes are made a second time and, if still delicious, enter a personal favorites recipe book.

    I get really frustrated by recipe pre-amble, so my trick is to keep a Trello board(s) for all my recipes. When I find a recipe I like, I'll copy the important information and make a recipe card in the board, along with a link to the original page. This also allows me to tag my recipes as needed (bulk cook, vegan, special occasion, etc) and include any changes I need (like converting measurements to metric, or adding/subtracting ingredients).

    @@janelbrackin6004 I've always wanted a good way to organise my recipes - when I discovered Trello, it was like discovering an answer to all my prayers. I have 4-5 boards just for different recipes (new recipes, old favorites, baked goods, special occasion food).

    I think she just really loves cooking and I also think that Beth is slightly more reserved and left a lot of room for Chelsea to talk. Either way, I wish she would talk more about cooking or make a cookbook or something, she loves it so much!

    Just today I chucked out 4/5 of the 'spice cabinet' my household had, my mom kept berating me because 'spices don't go bad'. There were things in there that literally went out of date in 2013, I'm so happy it's gone.

    supernova622 I know they won’t pose a huge health risk, I’m just glad all the jars that used to be filled with nice fragrant spices but were now big chunks stuck to the bottom of the jar and didn’t look anything like what they used to.

    I love sauteing all of my meats and veggies in the instant pot itself before I actually turn the thing on. It at least adds that depth of flavor that makes everything so much more satisfying.

    I love that you finally got Beth from Budget Bytes! My girlfriend and I have been following her recipes for the past few years. If I could make a suggestion - you should totally get Finn McKenty (The Punk Rock MBA) as a guest for the podcast. His KZread channel/podcast/Facebook group is mainly music business-oriented but is focused overall on career development and he's got some fantastic philosophies on professional growth.

    Chelsea your description of cooking with TV Shows playing on the laptop cracked me up I do that but with The Financial Diet or other youtube on the laptop! And yes love the help with cleanup/dishwasher etc but often I like having the space to myself.

    For those who don't eat a lot in one sitting, budget meal delivery boxes like Everyplate and Dinnerly are great options. Those meals that are made for 2 people can stretch to like 3 or 4, give you a lot of variety, and allow you to have the convenience of having ingredients delivered to your home!

    That De Cecco and prosciutto pronunciation though 😂 First C in De Cecco is tch, not k. And prosciutto is pro-sh(like the end of hush)-u-tto(those Ts have the same sound as the T in touch). KZread basically taught me English, time to give back to the community 🙏🇮🇹

    I feel seen! Totally agree with Chelsea and the crockpot craze. I used to think it was just me cause I'm not American and I have never lived in America but I just never understood why people would want to eat such bland food. Mostly chalked it up to "for-the-love-of-convenience" but yea, stovetop is the best!

    I've realized that cooking is generational. Alot of people will hate a certain meal because their parents were inexperienced on how to cook it. I'd hate chicken too if I only ever had it boiled.

    Frozen veggies&fruit sometimes have a weird taste. I tried freezing fresh cilantro since I could never finish it and it didn’t turn out well. I thought the reason was because biologically freezing can break down the cell walls of the produce. I love roasted veggies, broccoli, carrots and sprouts, but I always picture the soggy bagged pees and corn that my mom would feed me stove-steamed. I freeze fruits for smoothies but it works since I’ll blend it. For the record I’m fine with leftovers. Just the freezing part is tricky.

    I chop cilantro and pack it tightly into ice cube trays cover with water and freeze. It does not work well for fresh cilantro applications. But it's great tossed in a pot of beans, soup, or taco filling

    I don’t dislike Barilla personally, but De Cecco is good too. Wanted to be slightly annoying and correct the pronunciation, hehe. It is De Cecco with the first C pronounced as in ‘cherry’ 😊 kinda like, “De Chekko” 😊

    Crockpots and Instapots are many people’s first entries into cooking. It’s valid to point out their shortcomings, but I don’t think it’s necessary to dismiss them entirely.

    You can steam a lobster in an instant pot...I use mine quite a bit but cook rice on stove top
