BEST WAY to Sharpen Any Knife RAZOR SHARP!

Тәжірибелік нұсқаулар және стиль

This is the best way to SHARPEN ANY KNIFE RAZOR SHARP! We include links to what you need here. I'm getting tons of the same questions that answered here and in the video. Listen to it again if you have to and you most likely will have it answered. LINKS to belts are below.
Sharpening knives razor sharp with a belt sander from Harbor Freight is AWESOME! I was able to fix a few blades and get every knife I own razor sharp in a fraction of the time.
You can sharpen anything from a Fillet knife to an axe or lawnmower blade this way.
And NO IT DOES NOT BUILD UP HEAT TO RUIN TEMPER! That's a myth. This is how many knife makers sharpen their finished knives. There is also an update video to answer more questions linked to in the video above. Check it out.

NOTE: Loosen the adjustment screws on the vertical belt support and move it all the way back then re-tighten the screws. This helps the machine be more forgiving on getting your edge and gives you that convex edge you want.

Thank you Thank you. After watching your video, I bought a Harbor Frieght 30" belt sander (20%off) / a 10 pack or 400 grit belts and a leather belt with honing compound. Tried my hand at a set of cheap kitchen knives which now slice through paper like butter. Next on to the old dull Henkel and GunterWillhelm higher quality kitchen knives. I'm sold!

Hey Scott !!, Here's a trick I learned with mine. Lay the sander on it's back and turn it around so that the belt is going away from you. The belt will be flat and MUCH easier to sharpen knives without a knife guide. Try it and maybe even make a video about it. I would, BUT ! I am no good on video. PS, This also works on WORK SHARP knife sharpeners too !.

For whoever said this butchers steel by taking off too much metal: you don't have to take off so much metal every time, just the first time to re-edge an exceptionally dull knife. Once re-edged, it can be sharpened with a very fine grit belt and / or simply stropped with a porcelain stick without removing much fiber at all. Great video ! PS: Only an idiot would let the blade get anywhere near hot enough to actually change it's temper; as you can see by this demonstration it is a very gentle, finesse of motion & precision, very cool.

Nice video, Scott Gregg. FWIW - Back in the early to mid 80's there was a chain of cutlery shops in just about every mall or larger shopping center here in the Indiana area called "Cutlery World". For several Christmases, I worked part-time in one of these stores and this is pretty much the exact same way that we sharpened our customer's knives. We used a little different style narrow belt sander made by a company called "Hook & Eye". The belt surface laid flat like a bed, and ran from the rear to the front (towards the user). We held the blades at an angle (like you describe) and gently pulled the blade from left to right to and pushed the blade away from us. Instead of finishing the blades off with a leather belt we used the store brand (Cutlery World) crock-sticks. First the grey "coarse" sticks for a few strokes then the white "fine" sticks for another few strokes. The result was the same (a blade you could shave with)! We used this same method on all un-serrated knives from cheap (no-name brands) to expensive professional chef grade knives. I too have also used the Lansky or Smith sharpening systems with good results but with nowhere near the speed or ease of the above described abrasive belt method. BTW - I find that people who rudely "tell people" what they should do without acknowledging that there may be different but equally effective ways of doing things, should generally be ignored and not encouraged to attempt to interact with gentlefolk. In other words...... "Don't feed the Trolls"!!! ;^) Best Regards, all.

I bought a couple of these belt sanders, one is dedicated for grinding ( 800 grit belt with $8 angle guide set to 15 degrees) and the other for stropping (leather belt). Was so impressed with results I bought a sharpness tester to confirm the sharpness. Razors score 30-100 on the tester, my blades score 40-50 when done. Average kitchen knives score between 300 - 400. Butter knife scores 2000 (grams of force). Just 90 seconds of work. Still want to master wet stones, but this solution creates amazing results for such little money. Can't justify spending big $$$ on wet stones and accessories.

I can explain quick its easy solution the heat generated from the friction of the belt can ruin a knife but all u need to do is is its too hot to the touch dip it in water just to keep it cool thats all lol the edge wont rly be dmg but say u have a survival knife u do that too u hit a stick the knife will be brittle and is likely to shatter so just cool it with water

  • @rollinggoronable

    @rollinggoronable

kets ha ha na man, when u over heat the blade when grinding the edge, it doesn't harden, it over tempers making the structure of the steel too soft to hold an edge and it'll just bur over, to harden a blade u need to usually bring it n the realms of at a minimum of like 1200 °f, which is like a dullsish to light red

  • @VeritasEtAequitas

kets ha ha The water will keep the bulk of the metal cool but won't keep the fine edge from losing its temper unless your belt is also fully saturated with a constant drip. When actual pros do sharpening with any power tools, this is exactly what they do.

  • @HeavyFOC

    @HeavyFOC

    6 жыл бұрын

rollinggoronable --- YES, YES, YES! If one overheats the blade on one of these "sanders", then there goes your blade temper. Simple metallurgy here. No magic. This technique will work "ok" for thicker hatchets and axes and other garden tools at say 30 degrees angle, but thinner blade knives at say 20 degree angles will over heat very quickly on you. For those, I would use a set of decent "Japanese Water Stones" at say 800, 1200, and finish off with maybe 8000 grit and then strop with a leather belt to avoid "killing" the temper. One just can't "rush" a "lasting" edge on thinner knives.

High speed grinders and belt sanders generate localised heat which can be the death of a knifes ability to retain sharpness. Professional knife sharpeners do not use high speed wheels without coolant. Anyone can create a razor sharp edge but how long that edge lasts is another story. The sharp edge of a properly sharpened cooking knife actually rolls over or deforms with use which is why a few strokes on a steel brings it back to a sharp edge.

Well obviously if you let it get too hot it can ruin it. But getting it too hot means about 400 degrees not just warm to the touch. If your a dumbass and get it that hot then you have no business around sharp objects

R8ed4U: that butchers steel takes a lot of metal off a knife. Probably the worst thing to use in my opinion other than a quick touch up on a knife that you really don't care that much about anyway. The work sharp is a GREAT tool! I went the way I did due to 2 things: 1.cost is about 1/2. and 2. I could get a leather belt to really make things super sharp. the Works sharp can be bought here about as cheap as anywhere and the blade guides are great to help folks keep the correct angles: goo.gl/odOmKO

In addition to Mr. Gregg's Harbor Freight knife sharpening video, for people that have lots of knives to sharpen, belts can get expensive. Three packs on eBay cost in the $12-$15 range. The attached KZread video shows a very nice easy and inexpensive way to make your own belts. It also allows to to essentially get belts on demand bc your local hardware store has many more grades of sand paper than I could find on eBay and you don't need to wait for shipping. I actually prefer automotive sandpaper. The video says to use the higher of two grades of packing tape from the US Postal Service. kzread.info/dash/bejne/Z4OuzNerptO-Yag.html

One of the best sharpeners on the market today from WORK SHARP uses belts and I don't see them falling apart. waynerjson I'm glad you have a method you like. It works so well for you that you were compelled to post a thoughtful comment. I like that. Do you employ a sharpening steel? I've used one in my kitchen for years and I've actually put my pocket knife on it as well. It makes the edge last much longer and I may bring out my stones as much as twice per year. I would argue that the stones are taking off less material per use and will make the blade last longer. The amount of work time is irrelevant to me because I enjoy the process. It's like saying one can get the same amount of vacation in a tenth of the time. I like the process not just the product. You like what you like and I like what I like. Now we have a discussion. Very cool. Do you have any particular brand loyalty? That is, do you like any particular brand or maker of knife over all others?

Though I do like the old Normark hunting knives. My father has been using one since the 60s, well before I was born, and I have a pair of those I wouldn't want to be without. They have an incredibly hard edge that stays sharp for a very long time. I could process an entire deer from field dressing to final portion cuts on one sharpen and still cut paper when it's done. So I guess that could be loyalty of a kind. How is it that you were turned onto BenchMade knives?

if you have a real expensive knife, I would not recommend throwing sparks like that all the time, on cheap steel I guess it doens't matter much but I would NEVER throw those sparks on my expensive folders. I would hate to ruin the temper on a blade of mine. This is how most knife company's do their factory bevels though, or when you send them in this is how they re sharpen your blade for you, just have to be careful with the heat.

Max Savino I agree. Keep in mind that once you have established an edge only minor touch up is needed. Many times that means hitting it with the leather belt only. That said, My knifes that get sharpened somewhat regularly are " tools", not collector items. Keeping a working knife sharp, really sharp is important. I submit that if you are concerned about sharpening a knife too much or hurting the steel, maybe it's time to buy some working knives so you don't have to worry about it. Plus, everyone needs more knives right? haha

I was at a hardware store tonight and I saw this same grinder for 45 bucks I think, I very much considered buying it even though I get an easy sharp mirror polish on my edge pro, this thing would just be so damn easy to fix a broken off tip or just grind on a quick edge. I would want to figure out a way to set something on the grinder table so I could keep a more precise angle though. Have you ever used the Work Sharp?

Scott Gregg You know how when you get a bran new knife from the factory, like a Kershaw or something and even though the edge scratching looks as though it has been ground with a coarse belt, the edge is VERY "smooth" if you run your fingers along it, it is so smooth it almost does not feel sharp, but when you go to cut with it, the edge is VERY sharp. I cannot seem to re create this with my edge pro. My edges are smooth, but their super fine so when you run your finger along the edge, it wants to cut right into your skin. I really like the smooth thick factory edge feel, and i'm wondering if I buy this grinder you have from harbor freight and use the belt with jewelers rouge after words if this produces that same effect? I tried to re create this on the edge pro by doing my edge with my 220 grit stone, and then taking it right to the 6000 grit polishing tape, then stropping on leather. It was close but not quite there. Any thoughts?

Once you get in the practice any method works. I use stones for all my edges - kitchen and shop. I've used a belt sander to clean up an old plane iron, or old chisel blade. But I always have done the finish work with a stone (oil or water). For my kitchen knives I use a synthetic "India" stone with 3-in-One oil and finish with a strop. Never use the coarse side unless the bevel is getting rounded. The fine side puts on a good edge, just work it evenly until you have a continuous wire edge (or burr). Use the strop to polish it way and you can shave with it. Once you have a proper bevel on the edge, a steel before use will keep a knife sharp enough to take 16th-in slices off a ripe tomato for a long time. The chief drawback to powered methods for me is heavy handedness. Let myself get too eager and next thing the edge is blued. As far as cost goes, a good set of stones can be more expensive than a belt sander or powered grinding wheel. I think that considering sharpening media costs, there probably is not a lot of difference in cost between the two.

"Ya know", Capt Dave, they make bulk stuff in factories to sell high volume and don't really care all that much about quality, especially with anything under $50-100 per knife. It's fast and cheap, and it gives an okay edge that doesn't really last, but the consumer who hasn't had a blade properly cut with a file will never have experienced the difference and will never know. Once I started finishing blades the right way, they started staying sharper much, MUCH longer. Someone borrowed one and remarked on how nice it was of me to have touched it up for them to use. Nope, I said, I haven't bothered with that one in 6 months now, lol

All of this talk of ruining the temper is absolutely foolish! Can we remember to feel the side of the edge after a couple of passes on the belt? Or, after each pass if your terrified of destroying your knife? When the blade starts to get even a little warm, you may drag it across a wet towel nearby or dip it into a vessel of water. Duh! I very rarely must use anything coarser than 400 grit unless I am restoring a very badly damaged edge or re-profiling a blade. And, I use belts up to 2000 grit before going to the leather strop. However, I can't argue with the video evidence you provided here. I just don't particularly like a "toothy" sharp edge. But who would be disappointed with that chef's knife you sharpened? There is a video here on KZread on making your own belts out of sandpaper. I do this with great success. The really fine grit sandpapers can be purchased at the better auto-parts stores (NAPA). I bought a very nice Italian men's leather belt at Goodwill and sewed together my own leather strop belt also. It works every bit as well as the factory-made belts for electric sander/grinders. There are even different grits of polishing compounds to swipe onto your different leather strops if you like crazy-sharp and polished edges. I would recommend a ceramic rod before a butcher's steel to touch-up an edge while working with the knife. It restores and edge with a finer polish than a butcher's steel. Now, if you waited too long and need a more aggressive surface.... You did a great job with this video dude! Just remember to encourage only the use the finest grit you absolutely need in order to prevent unnecessary excess loss of steel.

Your method is probably not a big deal if you have knives to burn through. The belt sander takes too much metal to be used as a sharpener, simply overkill for most sharpening situations. The sander itself seems to work well for $30+$30 and can be used for other things but a guided sharpening set would probably be a better option for knife sharpening. You probably know this but leather stropping is not sharpening.

Kramer sharpens his knives with a belt sander and Alton Brown in his videos says a belt sander is the way to go. Of course the final sharpening is a 'polishing' with a leather strop and you only use the strop to polish the blade to a razors edge. And, you only remove metal with a sanding belt if the blade is damaged or super dull, like this tutorial clearly demonstrates. I think that's what people don't understand about this video, they miss the point, thinking you are always telling people to use a coarse strap and a leather strop when you clearly are not. Once an edge is honed with an abrasive, you should only have to polish it to razor sharpness with leather.

I would not recommend doing this unless you're willing/able to re-temper the knife after. The heat generated from friction will soften the metal in your knife and ruin the temper. The metal will become softer each time and will not hold an edge as well as a result. Unless you plan on tempering it again after just use a stone. There's a reason people use stones instead of this method, and that is it.

yes you can over heat the blade with improper sharpening, that is if you don't let the metal cool on each pass. Allowing the blade to get hot will affect the hardening, allowing time between passes will keep the metel cool and not damage the blade.

This is forcing an edge onto the knife. A $10 guided sharpener from Amazon does the exact same thing. The reason chefs use stones is so that a proper angle is sharpened. When you get a proper angle the knife has a longer lifespan and holds the sharpened edge longer.

A $10 sharpener won't come close to this result. The chefs who use stones do so because of tradition, not because it's the only way to get a good result. If the work involves hitting bones in the meat often, they will use steel instead.

If you are worried about a $400+ blade, maybe you aren't using it as a real tool anyway. signed - some guy in his garage.

eclark53520 Not sure why you want to go after me but I'm not getting into a debate with you. Do it however you like, I really don't care. This is how I do it and am happy with the results. Do your own homework and you'll find a dozen custom knife makers (many on youtube) that use belt sanders to form, and sharpen their blades. Like I said, if you don't like it don't do it. I don't care. My blades work great and I am not trying to protect knifes worth hundreds of dollars. My knives are real "tools" that get used to do real work, not artwork or display pieces.

Scott Gregg Master Bladesmith Murray Carter freehand sharpens his knives with Japanese water stones. So there must be some merit to freehanding. But I am not an sort of an expert on Sharpening. I just got into freehand sharpening.

I would never take anything away from the craftsmen who freehand with stones. I just can't get it. I can get knives very sharp with stones, but not this sharp. This is easy and fast for my working knives.

I like razor sharp knives! All of my knife collection has been sharpened razor sharp, by me personally. I always carry an arkensas stone or diamond steel with me to touch my knives up. About 30 years ago I pulled out a belt sander on a job and clamped it down. I used an 80g belt (pretty worn) to set the edges of my chisels and to put a hollow grind on them. The other guys were amazed at how sharp they were. So, everybody started doing it. You can sit there for hours with stones n steels to get a great edge or... just use a belt sander. I also am a chef and I do it with my very expensive knives. Its a touch, but saves hours of honing honing honing. I still finish with super fine steels and polish with a leather trop. But hey... hours and hours and hours or... zip...strop go!!!

Awesome deal for the working man's knife, people complain about sharpening this way because they own 200$ pocket knives or $200-$300 fixed blades that never get used. This is perfect for a good workhorse knife that cost 30$-50$ ......no need to hand sharpen tell your knuckles bleed, a couple swipes and your knife is ready to process wood. Now if your a chef with a 300$ knife yes a stone might be better, but as for heat issues Worksharp tools has proven that isn't the case. Great video.
