Best way to process acorns and make them edible, remove tannins, leaching, food, cowboy coffee

I´m showing the best and easiest way how to process acorns, how to remove tannins and make oaknuts edible. Making food from acorns is easy. Acorn coffee is delicious and can be used pure or mixed with normal coffee.
Native Americans have used acorns for food for thousands of years. Nowadays acorns are a forgotten food source, but it should not be like that. Oaks are widely spread all over the world and oaknuts are easy to pick. They contain high amounts of nutrients and vitamins.
Before oaknuts are edible for humans, they have to be processed. Tannins, which make them inedible, have to be removed by leaching. The process is very simple and does not require much work or any special techniques.
Next time you stumble upon an oak, remember that in autumn time those trees are full of free food.
Try acorn processing yourself. Have fun with learning new skills, refresh old knowledge and make delicious food!

Näytän parhaan ja helpoimman tavan käsitellä tammenterhot syötäväksi ja miten valmistaa niistä ruokaa, jauhoja ja kahvia. Tammenterhot sisältävät suuria määriä tanniineja, jotka tekevät niistä kitkerän makuisia ja ihmisravinnoksi sellaisenaan kelpaamattomia. Tanniinien poistaminen on kuitenkin varsin helppo toimenpide.
Amerikan mantereen alkuperäisväestö on käyttänyt tammenterhoja ruokana tuhansien vuosien ajan. Nykyään taito terhojen käytöstä ruoan valmistuksessa on lähes kokonaan unohtunut.

In an old video they showed how to get rid of the tannins by putting them in a fine mesh sack and just letting them rinse in a clean creek for some days which saves some work.

The indigenous people of Yosemite would alternate boiling and cold water over finely ground acorn flour. Hot water would leach out the tannins more quickly, but the wash in cool water would keep the starches from being washed away as well. Most people choose hot or cold, but many Californian tribes used a mix of both. The process took a few hours, but was effective, and wouldn’t take multiple days.

This is a great video! Very educational! I'm attempting my first batch of acorns - small handful this time around. There blogs with written instructions that skip entire steps or are unclear. Hopefully I can salvage what I have. I have an air fryer/dehydrator that I can use for drying. Fingers crossed!

I never knew acorns were eatable at all. They sure are labor intensive, though. I have never heard of acorn bread. Now I am curious to try some.

Please help, what temperature do you dry the acorns in when they are in the sauna? For how many hours? :)

Please note, allowing acorns to cool during the hot leaching process (either by rinsing in cool water or letting cool before fully leached) will cause the tannins to become bound in the acorn and perhaps only using lye at that point can save the acorns (learned this by experience and then doing online research too late).

How hot and for how long? When you roast the acorns for coffee, do you use some kind of oil? Do acorns contain caffeine?

For cold water, it helps to powder the acorns first. This can’t be done with hot water though, because they will stick together and not leach

At what step can you stop and save the nuts? We have 5 gallon buckets and oxygen absorbers that we use to preserve wheat. Can something similar be used for the oak nuts? I was thinking after they have been leached and dried. Thank you for sharing!

Dry them in an oven _completely._ After that storing them in sealed containers with oxygen absorbers should be no problem. But they need to be completely dry as an assurance against mold. If you're not certain you can do that, freezing them as some people feeeze flour or various nuts/grains is an option.

That was coffee grounds. But it was specified later that pure acorn brew was also just as delicious. It's just a personal preference. (Obviously, as might have been the case for the confederates in the example given, if you don't HAVE coffee grounds, you can skip this step.)

In the drying step , right after the water process , would it not be better to use a dehydrator on them than a stove or open air ? Just a thought , but it seems like you are used to the low tech route .

Mielenkiintoinen video, kiitos!

  • @hungrycatwilderness

    @hungrycatwilderness

Moi! Prosessi on tosiaan hyvin yksinkertainen. Kylmävesikäsittelyssä aika hoitaa homman. Kolme veden vaihtoa vuorokaudessa on aivan riittävä.
