My personal experience of making baklava looks pathetic next to these guys. Admittedly, I make it once every few years and these guys make it every day. They're amazing!

This brand is the best. They have learnt from old famous master. "Additionally, this brand sells 'boz' (firik) pistachios. I recommend buying some of those pistachios and trying again. I once bought pistachios from this brand and made baklava at home, and it turned out fantastic. At one point, I started making tray after tray of it, but I stopped because it's a very high-calorie product."

I appreciate the work and effort of everyone in the video. And I also believe those guys at the beginning deserve a much better work environment. Proper ventilation, air conditioning and mask is a must. These guys might have lung diseases in the future if they keep working like that.

yes unfortunately they will get some lung disease. but it has a reason why there is no air conditioning. because the dough is rolled out extremely thin and air flow dries it out very quickly.

I absolutely agree with you. Many baklava factories are practically engulfed in a cloud of smoke. They deserve at least decent ventilation. Or it would have been great if they used masks. They're breathing in the starch they use. This will lead to serious lung diseases for them in the future.

The environment in which the baklava dough is made must be a cool environment without air circulation (breeze). Otherwise, the delicate baklava dough will dry out quickly and it will not be possible to expand. In addition, the crispy structure of the baklava deteriorates and causes it to become soft as if it were not cooked. Baklava masters give this information to their students at the very beginning.
