With my time in Yazd, Iran almost at an end, I headed out on one final food adventure before we headed to our next city! Come with me on my fun Iranian village food experience in Yazd, Iran!
Mr. Taster and I would be seeing how a couple of different dishes are made, including shooli ash, which is a popular dish in Yazd, as well as abgoosht (dizi with eggplant), and more!

After meeting the team, we headed inside the Saraye Jahangara Traditional Hotel, which is a large, traditional house. The grounds were beautiful! They had some beautiful peacocks and a pretty white bird. There were also gardens, a fountain, outdoor seating, a resting area, and more.
They served us some amazing musk willow tea, and then the woman started cooking. They had lamb, tomatoes, potatoes, onions, chickpeas, turmeric, salt, and pepper ready for the dish. They start by boiling the lamb for 10 minutes before adding black pepper and turmeric. The cooking process takes 2 hours!
For the other stew, they had lamb, split peas, apricots, and more! I tried an apricot, which was nice, sticky, and meaty! Then, the woman added turmeric, black pepper, quince, and split peas to the pot. Later, she adds the apricot!
While we waited for them to cook, we started a fire in the sun so we could make some coffee! It was so hot out! It was so hot, they covered our seating area to give us some shade!
These dishes are unique to Yazd, so they’re a must when you come here. We had more musk willow to cool off. Then, they put cacao, sugar, coffee in a pot. It usually takes 2 hours to prepare properly, but we’d be shortening it.
After adding tomatoes and potatoes to another dish, I saw them making rolling out balls of a local bread dough. They add herbs to it and cook it in a tanoor oven. I tried my hand at putting the bread on the wall of the tanoor. Then, they take the bread and lower it toward the fire to let it char a bit.
The bread was nice and fluffy and contained some tasty coriander. It was so good! I couldn’t get enough of it. The sesame seeds in it were also fantastic.
Next, they started on the shooli ash, which is the must-have in Yazd. It’s a beetroot stew, but the beets are white here! Meanwhile, after 2 hours of boiling the coffee, they add cardamom and rose water. The process of making these dishes was pretty long and complicated.
We had a Yazd cake with the coffee. It was a great pairing! I loved the sweetness of them both. The rose and cardamom made it the tastiest coffee I’ve ever had!
Back at the quince stew, she added pomegranate paste and saffron. Then, they make a wheat flour slurry to add to the ash. Everything looked and smelled amazing!
For. The lamb stew, we started by sucking the bone marrow out of the bones while they mashed it up. Finally, it was time to eat!
We started with the shooli ash. You add pomegranate paste to it. It reminded me of borscht, but had a sweetness to it. I loved the crunchy beetroot! Then, we took some crunchy bread and added the abgoosht and meat juice on top. The bread soaked it all up!
The tahdig were like crispy rice patties. I loved the mix of textures! Next was the saffron rice and khoresh-e beh (quince stew). It was very balanced!
Next was the lamb stew with bread. The cinnamon added some sweetness. It was good and hearty and contained the best lamb of all the dishes. The goosht kubideh with onion and bread was fantastic! What a meal!

    Hi David: Another video that is simply divine. Sometimes I tend to overlook the food because the history of Iran is sometimes so complex and interesting. The more you see, the MORE you want to see and learn. Can you believe that those buildings withstood the test of time with all the intricacies in the designs? I see why you love your ring, it's the same torquoise colour used in the buildings, so it's got to be something special. The breakfast looked delicious though. Anything with flatbread and you can get addicted 😃. Ali is doing a great job in giving the history of the area and Mr Taster and his wife are an adorable couple. Love the gifts you bought (very cheap in American dollars) and the fact that you bought something for your ex is so special: much RESPECT. Nothing about you surprises me.     The Parsi fire temples in India are out of bounds for non parsis (zorashtrians ), which means we are not allowed to enter these fire temples. India gave shelter to the fleeing parsis and we obey their wishes till today , whereas in Iran everybody’s allowed inside these fire temples. The Iranshah, the holy fire these parsis brought from Iran is housed in a temple in Udavada, Gujarat , India, where the parsis first landed on Indian shores some 1200 years ago.

    Parsi means Persian. Persians are all over Iran, different religions. Zoroastrianism has parliament representation in Iran and the holiday of Iran is Nowruz. What you say is not exactly true - Iranians respect Zoroastrian wishes.

    We used to cook lentils soup in a pressure cooker with fried onions and olive oil and it takes just ten minutes but without cinnamon . I love the unique Baclava made of pistachio looking yummy . Salamat David thanks for your interesting videos in Iran 🇮🇷

    Lentil Soup looks so good I love soups so this is nice . Wow what a kitchen . Little elevator down to the pots. Stews a long time I bet it sells out. And cannot go wrong with Meat and eggs to with the soup. Hearty breakfast!! Give me a box of Baklava ! please. The best ever. YUMMMMMMMMMMMM. Coconut and Pistachio omg heaven send me a box lol. I would have to take a lot of money because I love the crafts and items they make so beautiful.♥ Mosque is beautiful. The design is just beautiful. Fire Temple so beautiful. The history is amazing and really nice to understand . Sacred Fire itself is truly amazing. They protected it and keep it burning all this time. Would really love to see Iran. You have made it such a lovely experience♥

    most of zoarastrian came to India and survived with their religion. we call them Parsi people most of them live in Mumbai and Gujrat.

    Wrong. Most are in Iran. Parsi is the language of Iran - Parsi also means "Persian". There are many Persians in Iran. Iran's biggest holiday is Zoroastrian too (Nowruz). Persians (Parsi) are not Indians. They are Iranians, no matter where they live.

    I thank god that our city of Mashhad was not declared to be Yazd. It is really important. Because as you know Mashhad is a religious city in Shia Islam where it is claimed that we Mashhadis killed Imam Reza (he died by himself), who was a newly arrived Iraqi refugee, and then buried him in our city for expected revenues ,from pilgrimage and are now directly competing with Saudi Arabia in terms of religious revenues. But as you know we are “Shia” and not Sunnis and is not like that and we are actually nice people, even though in Iran people think Mashhadis are not such great people for what they did in the past for some expected revenues. Also note that if Imam Reza could go back to Iraq and had died there, we had no Imam in Iran and at least for this, other Iranians must respect Mashhadis more. In short, Mashhad has its own holiness and sanctity. But Shiraz is not that holy and can take some damages. Shiraz is a city near the hotspot and capital of the Persian Empire. Yazd was built in 12th century and soon became a center of Zoroastrianism. Most people in the West know Tehran very well though.
