Bengali Egg Tadka/Veg Tarka Fry-Easy, Perfect Dhaba-style-Kolkata Street Food Recipes

Tadka dal (or, as Bengalis call it, torka'r dal) and roomali rooti is the Bengali's favourite fallback dinner. On the way back from work the tired Kolkata worker will often stop by at the street-side dhaba to buy an earthen pot of steaming egg torka and some roomali rooti. The tarka most likely comes from the city's Punjabi community that owns and operates famous dhabas such as Russel Punjabi Dhaba, Jai Hind Dhaba, Balwant Singh’s Eating House, Bachchan's Dhaba, and many more. These dhabas stay open late in the night and serve customers buttery tarka, rotis, chicken bharta, tandoori chicken, lassi, and tea.
In our recipe we have tried to emulate the tarka prepared on the streets, cooking it in two stages-once with the spices, and then finishing in small batches on a screaming hot pan for the smoky flavour. This two-step process is important to achieve the dhaba style tarka flavour. For the egg tarka just like the dhabas, we don't fry the eggs separately. Instead the eggs are whisked in and cooked briefly to give the egg tarka a creamy texture-the eggs get cooked in the residual heat leading to silky strands of egg instead of ending up dry, rubbery.

সব থেকে সহজ উপায় হলো ঝোলটাকে ঠান্ডা হতে দেওয়া। তাহলে fat টা জমে যায় ওপরে, আর তুলে নেয়া সহজ। তারপর freezer এ রেখে দিতে হয়। যখন প্রয়োজন বের করে ব্যবহার করতে হয়। Translation: When cooking mutton curry, collect the fat that floats on the top. The easiest way to do this is to let the mutton curry cool completely. Once cool the fat solidifies. You can take out the solid disk of fat, wipe it with a paper towel and put it in a airtight jar or ziplock bag and store this in the freezer. When you have collected enough fat, you can melt it and put it in a jar like we have done and store it in the freezer.

Tried it out yesterday....and I can’t thank you guys enough...you hv no idea how desperate I was for the tarka recipe and to finally be able to make it almost like the original tarka,I cried out in happiness. I did not add mutton fat because I did not hv it at hand and I just couldn’t wait to hv mutton fat to make it,but next time surely will. So to add a little extra flavour I added some chicken stock😛 But even without the fat ,it was yummy 😋and am super happy 😁 Bong Eats yug yug jio ❤️

Heart attacks don't happen by eating home cooked meals from scratch where you add a tad bit extra sugar or oil. Please google the cause for heart attack and educate yourself so the same might not befall you.

It's 30 km from my home .. when I was medical representative, sometimes I eat there .. You can also try Pappu punjabi dhaba in polsanda, near barhampur .. specially bogari meat .. very rare small bird kosha ..

I just ate it last night and now I want to eat it tonight as well lol. One of the best things I found to eat in Kolkata. Butter and egg is ok but it's my first time seeing mutton fat. I think if I tell them to save some fat than they gonna beat the Shit out of me saying that the mutton won't taste good without the fat.
