    Good video. It would’ve been helpful if you had mentioned that it could take several hours for the ribs to reach probe tenderness (203F-210F) after wrapping them.

    If you don't want to wrap just make sure to spritz every hour or so. I never wrap, and I have never had a problem with drying out, and you get that awesome bark.

    Hey Harry great job!! I Those ribs look awesome!! Btw, I, like a lot of Texas like to cut the ribs in individual pieces. It's a lot more work but the payoff is a more intense smoke and rub flavor. The ribs get hit with both smoke and rub from all four sides of the meat as opposed to only two sides. The other advantage is the fat and collagen breaks down a lot faster and you don't have to wrap and foil the ribs. Whenever I really want to impress my guest a will go the extra mile and cut them up. I was wondering if you have made or could maybe make a video cooking with both technics. I am sure you have done them before and was wondering your thoughts on it. Also, I love your rub! It's some great stuff! Yeaaaaa Haaaaaaa!!!!! Brother!

    I built a drum smoker. I love it. Once you get it dialed in, you can cook on it all day. I'm going to do a brisket on it next weekend.

    Dear turtle head I bought a cheap Braufells offset smoker and am having a hard time keeping an even temp .I hear the smokers with 1/4" metal plate are easier to use.Do the electric blower gadgets help with keeping an even temp?

    Harry those PBCs are like magic.. My understanding of thermodynamics is obviously lacking lol. I don't see how they cook so evenly. I know I want one. I hope that's my Christmas present.     Hi Harry, I've got an Expandable Smoking Rack from Weber for my WSM 18.5" . Would the results be similar if I take out the waterpan and hang the ribs on the rack, like you did in this video? Thanks and greetings from The Netherlands ;-)

    They look great. I’ve been looking for beef ribs all summer, very hard to find here in Jersey, even local butchers don’t have them, or tri tips for that matter, they can order them but they have gotten really pricey. Great video as usual, cheers from the Jersey Shore.

    Bought a Oklahoma joe bronco at walmart and seasoned it, yesterday first time ever hanging 3 racks of ribs an two chicken halves using mesquite lump charcoal, hickory, peacan and cherry wood, food was awesome with fat dripping in fire and flaming up, 4 hour cook time, have to clean today, on bottom unhook cap and wash grease and ash out the hole on bottom, replace cap, I like this so much better than my camp chef dlx model pellet grill

    As a beginner I appreciate and value your posts. I am still trying to understand how long to cook beef short ribs in Webber sm. Any temp and number of hours you can suggest for short ribs and back ribs Having them dryer then I think is preferred.

    Unlike the short rib, why on the beef back ribs do they trim away the meat between the ribs? I feel like you are left with the “scraps. ” I apologize if I missed if you may have explained before...

    The meat portion on the back ribs are sold as ribeye steaks so the residual flesh in the back rib is usually minimal. There is enough meat to get some tasty back rib barbecue if you know how to cook them

    I get my beef short ribs from Restaurant Depot. Sams also carries then but you need to call ahead and tell them you what the ribs whole uncut. At Sams in Los Angeles, they slice them 1/2 inch Flanken cut to make Korean Kalbi ribs.

    Quick question, is the back rib worth the money and time to smoke. I just thought they didn’t have enough meat to smoke and afraid to make jerky instead of ribs for dinner.

    I did it on an offset last week. Just look for a pack without exposed bone and has some marbling. That'll give some cushion for the long smoke. Most I've seen, i can see and feel the bone on the front.

    You should advise your viewers when they see Back Ribs gouged as deep as these ones were to leave them for those who will make soup. The Short Ribs were Awesome!!!! 👍
