Beef Kurumulak Varattu - Beef Pepper Roast Curry
For beef marination
Beef -1 kg (mix of bone and boneless cut )
Onion -1 sliced
Pepper powder -1/2 tbs
Ginger garlic paste -1 tbs
Water -1/4 cup
Salt
Mix all well and pressure cook till meat is soft and cooked
For Curry powder
Pepper whole -2 tbs
Coriander seeds -1 tbs
Cumin seeds -1/2 tbs
Fennel seeds -1 tsp
Fenugreek -1/2 tsp
Dry red chili -3
Chili powder -1/2 tbs
Coriander powder -2 tbs
Garam masala -1 tsp
Dry roast all and grind into fine powder
For pepper roast curry
Ginger garlic crushed -1 tbs
Green chili -3
Shallots -6-7 sliced
Tomato -1 big sliced
Curry leaves -2 tbs
Coconut oil -2-3 tbs
Salt
Curry powder
Cooked beef
For tempering
Ghee -1 tbs
Shallots -2
Cumin seeds-1 tsp
Fenugreek -1/2 tsp
Curry leaves -1/2 tbs
In ghee splutter all and keep aside to pour into curry .
Pressure cook beef and keep aside .
Dry roast raw spices and spice powders, powder and keep aside
To a pan add coconut oil and sauté ginger garlic crushed , green chili , curry leaves , onion and sauté . The. Add tomatoes and cook well . Add the curry powder and salt and dry roast well . Then add the cooked beef and the stock and thicken the curry .
Add the tempering and it’s ready to serve .
Mutta pathiri
Rice flour -1 cup (roasted rice flour aka nice pathiri podi )
All purpose flour -1 cup
Warm boiling water -1/2 cup
Coconut milk -1/2 cup
Normal room temp water -1/2 cup
Egg -1
Baking soda -1 tsp
Salt -1 tsp
Normal room temperature water more if needed .
To rice flour add warm water and mix cover with lid for steam to cook , and then add all purpose flour , normal room temperature water , baking soda , salt mix and add to blender add an egg and coconut milk . Blend into thick pancake batter . Add more water if needed , incase if it’s too loose add little more all purpose flour .
The nonstick pan needs to be really warm in high temperature pour a paddle full of batter and allow holes to pop up and then reduce temperature, cover with a lid and cook . Once cooked brush with ghee and it’s ready to serve with coconut milk .
