Beef Jerky on the Pellet Smoker

Recipe
2 - 2 1/2 LB Eye of round or top round roast
1 Cup soy sauce
1/2 Cup Worcestershire sauce
1 Tbsp Smoked paprika
1 Tbsp Chipotle
1Tbsp Ground pepper
1 Tbsp Red pepper flakes
1 Tbsp Honey
Freeze meat for 1 hour prior to cutting. Cut meat into approximately 1/8 in strips and put into a large bowl. Add marinade and mix together well, be sure to cover all of the pieces. Cover and rest in fridge 24hrs. Remove meat from marinade and dry on paper towels. Lay strips of meat onto wire baking racks and put in your pellet smoker for 4 hours on the smoke setting. Take out and enjoy!
You can do this in the oven too if you don't have a smoker. Add a tsp of liquid smoke to the marinade and set your oven to the lowest setting for 3-5 hours with a dish towel over the door to allow for airflow to dry out the meat.
