Those are the so-called trim wheels, they provide pilots with an indication of the position of the horizontal stabilizer whether the trim is controlled by the autopilot or whether it is controlled manually by the pilots. It moves by hand, with an electric motor via a switch on the handwheel and when engaged the automatic pilot moves it.

Only thing I saw her doing was setting radio and nav settings and raising the landing gear. She wasn't taking off or flying the airplane.

Interesting women are objectify on KZread for piloting when men are not; just do a search “male pilot” then search “Female pilot” for proof but hay I am not complaining being a dude myself as being a heterosexual male myself there’s nothing like seeing a woman in uniform and on top🤣. Have watched a few of her videos so far to see that she is highly skilled and I’d hire her in a heartbeat to pilot an aircraft; she’s confident and chilled.
