AD | Beat the Chef is BACK. And this time Baz is taking on Chef Ebbers in a Mystery Box Challenge that celebrates the humble rice grain.
To swot up on their rice knowledge, we sent them both to learn from a rice farmer and rice breeder in Italy. BASF’s agriculture experts helped to explain just how much work grows into creating the grain we so often take for granted! So, whose dish will best celebrate everything they learnt in the paddy fields? Who will take the win on this occasion…?

    @@LilianaKalithey made a joke earlier how risotto is always a date meal and Ben makes it when he has a dinner date, and so Barry is saying his personality must be terrible whilst his risotto is great meaning that although he can make a great meal, his personality can’t find him a gf etc

    I saw a really interesting video "Louisiana Crawfish and Rice Farm .." where they used crawfish to control pests in the rice fields and harvested the crawfish every other year. Essentially getting two crops out of one field and saving on pesticides.

    Ebbers was chuffed with the tuille he’d peeled. “I’ve got a rice cracker boys!” He squealed. Barry kept cool, though he wanted to scream, with his rice-shaped rice cake with a nice dollop of rice ice cream.

    When Ebbers goes all out its always an amazing Dish. That Puree alone makes my mouth water with that Vibrant Colour and the Flavours jammed into it. Also mad respect for going Italian to celebrate rice! 99% of people would immediatly go to China, Japan or India thinking about rice

    @@dm9929 I've been thinking a lot about this. In Western countries, we tend to have a very small window of what I call the "cuteness factor". If an animal is too gross (bugs, frogs, snakes), it's not traditionally viewed as food from a Western perspective. But the same goes for the other end - if it's too cute, it's also not viewed as food. Not a judgement, just an observation.

    I work in crop modeling research (using computer programs to simulate crop growth, development, and environmental impacts under different environmental conditions and management practices). One of the goals of my field is to figure out which traits are needed under future climate conditions, so that breeders can get working on creating those new cultivars now. The 6-8 year timeframe mentioned in this video is actually pretty fast turnover for a new variety. Depending on the species and the breeding techniques used, you could easily be looking at a 10+ year breeding cycle. It's the reason why the biggest form of industrial espionage in the ag industry is seed theft.

    I know it is not everyone's cup of tea, but I adore learning how different food industries around the globe are adapting and researching to get the most out of very little. This is something we will all have to do in the coming decades - or at least you all will, as my time is maybe a decade left.

    Idea: Stop a few random shoppers, ask each one to nominate one item from their own shopping bag, then cook a meal from those. Alternate idea: Get kids (Jamie's maybe) to pick ingredients (perhaps from specific categories, so it's not all cakes and candy). Alternate alternate idea: Blindfold Barry and send him shopping at a market. All he can say is "I'll take one of those, please."

    Sadly, Melissa was 100% correct, the po' vally hasn't seen a drop of rain, so not only they don't have water, but the water from the venice lagoon is going upriver and destroying the eastern fields, and the alps are giving less and less water downstream!

    When Ben said "i want it to smell like the taste of rice" I knew exactly what he was saying! I drink a lot of genmaicha tea and you get that amazing nutty smell that tastes like rice, and now I want the boys to do some tea pairings! Can we make it happen?

    I think that if they left then on the bone it would be a bit novelty. But well cooked frogs legs are delicious and added to thar dish was smart. The way Ebbers treated the ingredients is what takes it out of the novelty.

    Ben's dish looks so vibrant and inviting, if you order that in a restaurant, you know you'll get your money's worth. While Barry's dessert will immediately intrigues you if someone introduced it as their special seasonal dessert of the day and I would definitely want to give it a try too. Who wouldn't be curious with Rice Ice Cream....

    Ben, I love your devotion to your garden allotment! As a fellow gardener who loves using my homegrown produce in my cooking (albeit not as well as you do!)     I fully disagree with the winner. Ben ABSOLUTELY nailed his risotto and did something I would eat boat loads of. But Baz tried to recreate a thing he tried in a restaurant to celebrate the ingredient in a local way AND HE ALSO NAILED IT. So just for the difficulty alone, Baz should've won this and is my personal winner

    My vote for winner goes to Barry. The risotto looks amazing, but with the exception of the twille, all of Ben's innovation came from what he added to the rice. No matter how special it was, it was just a vehicle. Barry did a much better job of celebrating the rice, and doing more with it. I mean, I've hqd lots of different rice crackers, but I've never has a rice ice cream.

    Very appropriate to not only promote Italian rice in the middle of the worst drought, Italy has EVER suffered from, but to also promote a chemical company, that is massively responsible for over fertilization, species decline, mono cultures etc. etc. etc... Proudayou guys!

    Ebbers makes a risotto with stuff from his allotment. Barry makes something sweet out of a traditionally savory ingredient and overcomplicates it. ...yes, all is right with the world. At least for this 20 minutes.

    To be fair to Barry, sweet rice puddings, sweet rice porridge and sweet rice cakes are very traditional in many countries (including my own, def had more sweet rice dishes than savoury growing up as sweet rice porridges and puddings are a huge staple from where I'm from) but maybe sweet rice dishes are more uncommon in the UK?

    In South Louisiana many farmers rotate rice and crawfish in their paddies. It creates an environment that benefits the year round process.

    Honestly, I think Barry was robbed. I would have chosen Ben's dish every time, but Barry nailed the brief better, and did something that was amazing, completely unexpected, and new.

    Even if Ben’s dish is better, I feel that Barry’s is the better celebration of rice or at least the most creative. Maybe I’m wrong though, perhaps less is more

    I love these types of videos where you explore and showcase a "hands on" part of whatever ingredient (like going to a farm, brewery, etc...,) and then have a battle or just cook with that ingredient. Not only is it interactive with it's education, it's personal, benefits those interested in the field, and adds so much to the video. Awesome stuff, thanks guys!

    No way!!!!! I've never seen Mirto, rice cooked in a cake, and the other elements!!!! It TOTALLY should be Baz. You even gave Ben stick for making risotto throughout the whole video as a "go-to" but Baz did something where we all learn about new ingredients (Mirto) and new ways to use a VERY familiar ingredient. Mike said his wife is sick of risotto now. Nope. Wrong decision.

    The rice cake is very interesting and something I will be trying to recreate. Sometimes, I find these contest can't have a winner because both dishes are so unique and celebrate the food item.

    Would love to see an episode where Jamie wears those colourblind glasses you can purchase and looks at different ingredients/dishes through a knew “lens.” Would be interesting to see him describe his experience, maybe it would even change the taste experience in some way.

    Rice was the most stand-out of any gelato flavour I tried in Italy when I went 10 years ago, so I think Barry's idea was awesome! And yes, there were little texture bits of rice in it, which is what I thought made it so interesting. ^_^

    I loved this episode. I had no idea about the rice, especially that some is grown in Italy. I really like learning about where our food comes from, how it is grown, harvested, and eventually gets to our store shelves.....and then getting to see how you both changed it into something spectacular.     What about a video on the more uncommon types of rice. Most know basmati, jasmine, sticky rice etc as the usual grains of rice. That would be interesting

    I kind of have the same "ego" as Barry in that I love to duplicate a meal I've had at a restaurant before. I also went to culinary school. I think it takes that special bit of hubris to develop as a chef/cook.

    I think I'd want to try Barry's more. It's a way of cooking rice I'd not even considered before, while I've had risotto plenty of times.

    The recent grocery shop challenge is then coming without the food team. But, I agree that I wish they would do it more. Though, it’s still impressive how far they’ve come in being able to execute recipes vs the earlier battle videos.

    Great video. Would've loved a bit more history on rice though. Where was it first cultivated and how it was spread throughout the world, and how the farming of it in Italy began. Food history is quite interesting given that most of the food that are staples around the world now, were in a lot of cases not native.

    Rice pudding is my favorite. I make it at least twice a month. I'm definitely going to try Barry's recipe.

    As someone who've helped from planting to harvesting to grinding the rice when I was younger, this reminds me of those memories. Growing rice in the more traditional way is labor intensive. Planters will have to be bent almost all day. We, kids, give them refreshments (local alcoholic drink made from coconut nectar). Pre-planting, us kids will help pick the snails. We sometimes gather a large sack-full. Near harvest time, we'd go with our grandparents and guard the rice during night time. It's very dark, no electricity where our rice paddy was. At harvest time, we'd wear long sleeves and long pants to prevent protect us from the itchy dust ripe rice has. This is another labor intensive part where the grown ups would smash the rice plant on a grill like contraption so the grains separate from the stalk. After that, the grains are spread over a concrete space (usually side of the road), and raked every now and then so they dry evenly. Only then the rice gets to a modern mill where they are separated from the husk. There's a portion of the husk that isn't hard that is actually use to feed pigs. I was given a sack of rice once when I helped. Was so proud of the work I did. To me the winner would be Barry cause his dish reminds me of how we use rice in a lot of desserts.

    I think in "Beat the Chef" the taste test should be as a Blind taste test, with Jamie and Mike not knowing who cooked what, i think they favor against Barry

    I feel like Barry should have won due to the fact that his dish brought rice to a new place for them and did it well, whereas Ebbers' dish was a seasonal rissotto with frog and a rice cracker. Don't get me wrong Ebbers did make it well, but the fact remains he literally played it safe and didn't really take a risk.
