BBQ Plum Sauce

BBQ Plum Sauce
This is the perfect combo of sweet & spicy. You get the sweetness of plums then the mild spice from seasonings.
This works great for sloppy joes, dips, bbq sauce, burgers, chicken, ketchup & as an alternative to nightshades.
If you have a nightshade sensitivity/allergy omit the pepper.
This recipe is on my list of easy ones to do. It really doesn’t require a lot of effort.
WHAT YOU’ll NEED- Yields 8 half pint jars
4 lbs Plums- halved/pitted
3/4 cup Chopped onion or 2tsp onion powder
1 Cup White Sugar
1 1/2 Cups Brown Sugar
1 Tbsp Salt
2 tsp Red Pepper Flakes- optional
1 Tbsp Ground Mustard
2 Tbsp Ground dry ginger
1tsp Ground Cinnamon
2 Cloves Garlic or 2 tsp minced garlic
1 cup Apple Cider Vinegar
1. In a medium bowl add all your dry ingredients & set aside.
2. Add halved/pitted plums to food processor(will take about 2 batches to process everything) then add into a heavy bottomed pot. If using fresh onions put through food processor & add to pot.
3. Add dry ingredients into pot & stir into processed plums. Bring to a boil then reduce to low & cover for 45min -1hr. Stir every 5-10min.
4. After 45-1hr you’ll have a thin consistency. Use your immersion blender to break down any chunky pieces that remain. Cover for another 45min-1hr and stir periodically.
5. Start preparing canner, jars & lids about 30min into 2nd cook time.
6. After 45min-1hr you’ll have a thicker tomato sauce consistency. Take off burner. Have prepared half pint jars ready. Leave 1/4 headspace. Stir to remove any air bubbles & clean off rim of jar for any residue. Place jars in canner and process x 20min. Let sit for another 5min.
I like to leave my processed jars on the counter overnight to make sure all the lids have properly sealed the next morning. After that, rings off & they can be stored x 18mos.
