It's a mudra. It's not a symbol; it's a specific position for the hands that creates a specific energy circuit/pathway. Every single way that you can position your body matters because each one creates a specific pathway for the energy to move and flow throughout the body. This is why yoga (the stretching kind of yoga) is so good because it is conducive to strength and flexibility which keeps energy running smoothly through the different nadis (junctures at which the energy can flow in or out). The system of acupressure and acupuncture are both based on the knowledge of the flow of chi/ka/akash/life force energy which are all different names for the same thing.
