Why does he put on weights on after the vacuum is pulled? The only thing I can think of is to prevent warping since there isn't any straight rigid thing inside the bag and he's not pulling the vacuum against the table.

What is he doing @4:38? Did he let it tack cure or something and is wetting again? Or am I mistaking the previous wetting stage for epoxy wetting for application when it was release wax?

Mylar is a PET resin sheet. (polyethylene terephthalate) Please purchase 0.3mm PET sheet. ;-)
