Bacon Cheesy Potato Flake Casserole Recipe - 2020 has been a crazy year to say the least, so you may find yourself with a box of dried potato flakes as a pantry staple. Here's a recipe that uses dried potato flakes, and it is really great.
Ingredients:
8 slices bacon, chopped
500 mL (2 cups) dry mashed potatoes
5 mL (1 tsp) black pepper
5 mL (1 tsp) salt
5 mL (1 tsp) thyme
2 ml (½ tsp) garlic powder
5 mL (1 tsp) onion powder
330 mL boiling water (or a combo of water and milk)*
2 eggs, beaten
375 mL (1½ cups) cheddar cheese, grated
Method:
Preheat oven to 180ºC (350°F).
In a fry pan, fry off the bacon until crispy.
In a large bowl; blend potato flakes, and dry spices.
Gradually add water and mix well.
Stir in some of the bacon grease and about half the bacon pieces.
Stir the eggs into the mixture.
Stir in half of the cheese and transfer to a casserole dish, top with the remaining bacon pieces.
Bake for 20-30 minutes, you are just heating through and melting the cheese.
*You can alter the amount of liquid and the liquid itself to suit your tastes.

    Same. I'll drop a potato soup recipe right here right now. Microwave a russet potato. Cube it. Mix chicken broth, veggies of choice, butter, and a packet of french onion soup powder into a soup pot. Mix in potato flakes until desired consistency (remember it will continue to thicken). Fold in microwaved potato. Done. Ah poor old college days, you served me well.

    I once knew a chef at a five star restaurant who made the most sought-after vichyssoise in the state. I was addicted to it. Gained 50 lbs working there with access to endless cups of chilled soup. Upon leaving, I went to him for the recipe. He made me swear to never share it. And I never will. But I will say it was made with Idahoan potato flakes. $12 cup of soup...made with boxed potatoes. If only those snobs knew. It cost pennies per cup.

    Speaking of family secret recipes, it took a pandemic for my Grandma to release her corn bread recipe. Her secret ingredient turned out to be Bisquick, and it’s the best corn bread I’ve ever had.

    I use dry potato flakes mixed in with shredded potatoes in my latkes. Makes em super crispy and bind together better

    The story about secret family recipes coming from the box/packet, instantly makes me think of Phoebe from Friends ~ It turned out that her great grandmother, Nislée Tu Laouse, was actually Nestlé Tollhouse; her nan told her a fib so she could say their "family" cookie recipe was "secret" 😄😆😂

    I made this at my home in Germany and really liked it - it has a flavor that kind of reminds me of a Red Lobster biscuit in the US. I used Pfanni potatoes, which is the most common brand here. 500 ml of dried potatoes worked out to two and most of a third envelope of potato flakes (240 g box with three envelopes of potato flakes). 330 ml of hot liquid were nowhere near enough for the Pfanni flakes . I added liquid until they were roughly the same consistency as what was on screen here and ended up using probably triple the amount of liquid, if not more. The Pfanni instructions for normal mashed potatoes are for 350 ml of hot water and 150 ml cold milk per envelope (+2 g salt and 5 g margarine or butter).

    I remember reading my great-grandfather's recipe for potato dumplings and at one point he mentions that you can use instant mashed potatoes as the base "if you are lazy or rich". Oh how the times have changed... I also found out fairly recently that my grandmother's cheesecake recipe bears a suspicious resemblance to a classic recipe that used to be on boxes of Argo corn starch (and my other grandmother's brownie recipe is pretty similar to the one that comes on packages of Baker's chocolate).

    I’ve made this recipe several times now, and we LOVE it, but have found ways to make it even easier. I’m very lazy. 1. Brown the bacon in my Dutch oven, then just add the other ingredients to that. (I make it with spicy sausage, too, and even half sausage and half bacon.). We like it with lots of meat! 2. Don’t heat the milk. Just dump it in cold. It’s going to get baked later anyway. 3. Move the Dutch oven to the oven and bake. One pan to wash. 4. A family size pouch of Idahoan potatoes is two cups of dry flakes. No measuring. 5. I don’t measure the cheese either. Just guess till it looks about right, and sprinkle a little more on top. This is great stuff for breakfast! Thanks Glen!

    I keep a large canister of dried potatoes (or more) on my pantry shelf, next to the dried milk and buttermilk, because you never know. This dish, with the addition of a veg, could be the main course or...a side in a pinch. I love my potato flakes.....thanks, Glen!

    I have been known to use potato flakes at times, but that is beside the point. In my younger days, I remember going to country stores and most always on the counter near the register was a wheel of orange cheddar cheese under a glass dome. We would usually buy a slice and it was always tasty. We usually referred to it as "hoop cheese" or sometimes "rat cheese". I like this recipe.

    My Grandma and Great Grandma didn't even try to hide it. We found the "original" recipes book when clearing out the house, and it was just a bunch of clippings from boxes, packaging, magazine pages etc taped to pages. Thankfully, someone had the forethought to hand write them all onto separate pages into a proper recipe book, which then got typed, copied etc. and passed on to anyone that wanted them. Some of the OG recipe sources became impossible to read from aging.

    I think the dried potato stigma stems from the days when they were pretty awful. Back in the day they had a distinct non-potato taste. These days they are hard to distinguish from fresh mashed potatoes, as you noted. I keep grated cheeses in the freezer.

    Something I've done from the past, now that I''m in hibernation for almost 18 months, is save the bacon grease in a mug in the fridge. Mom used to do it back in the 50's, which I think was a War Time Rationing Thing :D She would keep any fat drippings in the fridge. Of course Beef Drip was always taken from the Sunday Roast, and used for sandwich spread. I can see this recipe made with hamburger, with the bacon drip added in for flavour. I don't have freeze dried potatoes, but I do have potatoes in the "cold cellar" under the stairs, where it isn't heated. Not possible in our summer's here in Ontario, but it works great for storing veggies and apples during the winter. oh, btw, I live in the basement. I'll try this recipe soon :D

    I didn't use dried potatoes but cheesy mashed potato put under the grill (broiler) was my first recipe. I got it from The Ladybird Cookbook when I was four. The original photo had tomato rings on top but that was a bit too fancy for Blackpool, Lancashire, England. Serve with Heinz baked beans and a glass of slightly warm orange squash. Fine dining!

    Potato flakes are a great ingredient to keep on hand. Jaques Pepin uses them to thicken soups quickly. Fantastic trick. Also good in breads and to make fast shepherds or fish pies.

    Hey Glenn and Julie, your kitchen studio is pretty ideal! I recently got a 10'' pepper mill from a local milling company and it's really changed my pepper game. Certainly not a necessity, but the convenience and ease of a long pepper mill with a high quality mechanism was one of those upgrades that I never needed I knew until I had it.     while a boy, we made "Scout Stew" a pound of hamburger, Or a canned chicken or? canned veggies usually beans potatoes carrots etc. (or you can use frozen) Salt and Pepper to taste. water as needed. then when simmering add dried potato flakes to thicken. great in a dutch oven, or fry pan etc. good recipe to fill up hungry teenagers.

    It's funny to me when people get fussy about instant mashed potatoes. It is very simply dehydrated blanched potato. Now, do I prefer an oven baked jacket potato? Sure! It's the best! But having the flakes around opens up a world of possibilities when you don't have time to wait for a baker, or the energy to peel and boil. One thing I did the other night with my instant potatoes is use them to bulk up some twice baked potatoes I was making from leftover baked potatoes (I try to always put a couple extra in the oven when I'm baking some for supper--but The Kid often gets to the leftovers before I can use them! Ha!). Worked like a dream! Thank you for these very good videos. I enjoy the both of you, and I enjoy the comments section where I learn other uses or ways of cooking things you present in your videos!

    Great biographical information. Thanks for sharing and for reminding us of how to be 'shelf sufficient' in these times as well! AND TALK ABOUT COMFORT FOOD! IF the 'secret recipe' was 'on the side of the box', that strikes me as a recommendation: 'millions' probably made and loved it! The IDAHOAN brand was part of my childhood--seeing it on the shelves. The wider family grew potatoes in commercial quantities. WE knew that there were wonderful minerals and so on 'baked' into every fresh potatoe.

    Long ago, I worked in an Irish bar where the potato soup was made to order using potato flakes. Folks loved it. We still cooked a ton of potatoes every week, but, we used the flakes as a time saver.

    I too am a mash with fork person. And like anything, the boxed mash is just an ingredient, don't be afraid of it. One way you could dress this up is maybe a layer of drained canned peas on top, and then crispy fried onions on top of that.

    A lot of people are talking about using the potato flakes to thicken things; my Grandma used them to make extra-crispy fried chicken. After putting on whatever your usual flour/breading might be, dip your chicken in the egg-wash a second time and roll it in the potato flakes for another layer of crunchiness.

    I will add this to my pantry and recipe book. I never thought of having instant mashed potatoes but it makes sense as a back up. I don't know what it is, but this year, potatoes have become my favourite thing to eat. Thanks for this.

    Not gonna lie, looks pretty good. Had similar made things as a kid in the late 70s/early 80s to make food go further. My mom probably forgotten most of what she made during that time later on, but there are some flavors or textures you can’t get with fresh stuff that trip the old nostalgia of ‘back then’

    Glad you mentioned the room temp cheese. It made me remember that a couple of days ago, I took the cheese off my sandwich because that was all I could taste. Put it in plastic and in the 'fridge on a business trip. I remembered to take it home on my flight yesterday, but forgot to put it in the 'fridge here lol. It's in there now...36 hours later. It still looks fine, though!

    My pantry is stocked with long term storage dry foods. They have to be used eventually to keep them from getting too old. The best recipes are usually the ones on the package because they had a lot of research and taste testing done by the company so they would sell more of their product.     I have no problem with dried potato. Very versatile and really not any different then the real thing. I have also used them like this in many things. I have a brand I like that actually keeps some clumps for the texture. They are fantastic.

    Same brand of potatoes I keep on hand. I used to keep them just as a backup in case I wanted potatoes before payday. Now, even tho finances aren't really better, I keep them to add if my mashed potatoes are watery. For some reason that seems to happen more and more. And yes I use a mixer. For years I've used the same method and never had that problem in the past. I peel, dice and boil the potatoes, drain, and add 1 stick of butter and 1 8 oz block of cream cheese. They should be a little stiff. They also freeze really well and don't have the runny texture found in potatoes in frozen dinners. Easy to fancy them up with sour, chives and/or cheese.

    I have a box of potato flakes in my cart for my next grocery order. I want to try using it to make a flatbread for a pizza base. Then use gravy instead of tomato sauce, top with cheese. Bam, poutine pizza.

    That sounds delightful. Garlic pizza sauce is literally just a white sauce with garlic on dough.

    I teach individual emergency preparedness, the importance of having a catastrophic and emergency plan, communication plan, food and water storage. Shelf ready (shelf stable) food like the potatoes, stove top stuffing, rice, pasta, canned or dried meat products, etc. Personal preparedness begins with you.

    Oh yeah. There is absolutely nothing wrong with potato flakes. Pandemic or not, we always have them in the pantry alongside with a bag of rice, barley, flour, 3-4 pounds of our favourite beans, egg powder and can of olive oil. Those things are just the very basic "must have" of dried stuff in the house.

    I make something similar to this but shape it into a oval log about 3" by 6" inches like then put it in the fridge over night letting it set up. The next day i cut into 3/4" inch slicers and put them in a little corn starch leaving them about 5 to 10 minute to hydrate the corn starch and seal it a bit. Then to the freezer on a cookie sheet until completely frozen. I shallow fry them until they start to brown then pull them off let them cool a little then back into the oil for a second fry. they make a really good hash brown patty.
