🍀爆餡開心果糯米糍Pistachio Glutinous Rice Dumpling🍭
材料及份量(8份):
📌糯米粉(Glutinous Rice Flour) 180克
📌粟粉(Corn Starch) 20克
📌清水(Water) 240毫升
📌菜油(Rapeseed Oil) 20毫升
📌白砂糖(White Sugar) 30克
📌白芝麻(White Sesame) 20克
📌開心果(Pistachio) 100克
📌加工熟糯粉(Fried Glutinous Rice Flour) 適量
做法:
①先打碎開心果,再用小火炒至金黃,再加入白芝麻炒至變色,放涼後拌入白砂糖作為餡料
②將糯米粉、粟粉、清水和菜油攪拌成粉漿
③將粉漿過篩及倒入蒸盤中,包上保鮮紙,用牙籤戳幾個洞,並用大火蒸30分鐘
④用牙籤插入粉糰中,若不黏著粉糰代表已熟了
⑤蒸好後取出,再用膠刮刀拌勻,然後準備密實袋裏面倒一些油,然後將粉團放進去,再一直搓揉,等到不燙手的時候便戴上手套揉至光滑
(⚠️這個過程很重要‼️確保粉糰Q彈煙韌)
⑥把粉糰割成小塊,每份大約40克,兩面沾上加工熟糯粉後壓成薄片
(㊙️或可小火慢炒糯米粉至微微發黃 放涼待用作熟粉)
⑦放入餡料後,對摺收口並搓圓,包好後再滾上熟粉防黏
STEP:
①Crush the pistachios first, then stir-fry over low heat until golden brown, then add white sesame seeds and stir-fry until they change color, let cool and then stir in white sugar as filling
② Stir glutinous rice flour, corn flour, water and vegetable oil into a slurry
③ Sieve the slurry and pour it into a steaming tray, wrap it with plastic wrap, poke a few holes with a toothpick, and steam over high heat for 30 minutes
④ Insert a toothpick into the dough. If the dough does not stick to the dough, it means it is cooked.
⑤After steaming, take it out and mix it evenly with a rubber spatula. Then prepare a dense bag and pour some oil into it. Then put the dough into it and keep kneading it. When it is no longer hot, put on gloves and knead it until it is smooth.
(⚠️This process is very important‼️Ensure that the dough is elastic and tough)
⑥Cut the dough into small pieces, about 40 grams each, dip both sides into cooked glutinous rice flour and press into thin slices
(You can also fry the glutinous rice flour over low heat until it turns slightly yellow, then let it cool and use it as cooked flour)
⑦After adding the fillings, fold it in half and roll it into a round shape. After wrapping, roll it in cooked flour to prevent sticking.
