發現馬田早期食譜只有港語,剛好今天想要分享給台灣朋友,所以擅自翻譯了文字版再稍作整理,有需要可自取~ 湯種麵糰 8pcs 湯種 高筋麵粉 20g bread flour 水 100ml water 高筋麵粉 250g bread flour 糖 40g sugar 鹽 1/4tsp salt 蛋液 40g egg 奶粉 10g milk powder 酵母 4g yeast 水 70ml water 無鹽奶油 20g unsalted butter 菠蘿皮 低筋麵粉 90g cake flour 糖 80g sugar 無鹽奶油 20g unsalted butter 豬油 20g lard 奶粉 20g milk powder 蛋黃 1pcs egg yolk 泡打粉 1tsp baking powder 鹽 1/8tsp salt 湯種: 高筋麵粉加水,慢火不停攪拌至如畫面濃稠即可,放涼備用 酵母加水拌勻 混合麵粉、奶粉、鹽、糖,加入蛋液、湯種,加入酵母液 麵糰揉至光滑(約5~10分鐘),加入室溫軟化的無鹽奶油 放入碗中包好,發酵45分鐘(室溫25℃) 發酵好的麵糰壓扁排氣 ,壓走氣泡,令麵包氣孔更細緻 分割成8等份揉成球狀,再發酵45分鐘 菠蘿皮: 所有材料混合成糰 放於保鮮紙上搓成條狀 放進冰箱15分鐘冰到變硬後,分八份 保鮮膜包起,擀至扁平(擀上可灑高筋麵粉防黏) 菠蘿皮放上已發酵兩次的麵包後,刷上蛋液 放入已預熱的烤箱,180℃烤15分鐘即可

+Chase Tsai you may try to use fresh milk instead. I've put 70ml of fresh milk instead of 20g milk powder and 70ml water. If you are lactose intolerance, perhaps try with soy milk? Try it out and let me know if it works?

我第一次做麵包,睇左好幾個視頻決定跟Martin呢個。一做就成功! 完美鬆軟。健康D麵包麵團唔用牛油換了用olive oil,效果很好😊

@@karpolam2888其實任何油都可以。我用橄欖油. 牛油更香
if anyone saying that you followed his recipe and you made it successfully, I seriously doubt if you really did what you said! For one reason, the ingredients for the crust is super dry and will never be made into any thin layer! For another, 15mins baking is too short to make anything, your dough will be still raw! I followed everything he said, and I used exactly the same ingredients, including lard.

Susan Qiuge ZHANG,hello! well I had no problems about timing, but yes, the crust is super dry, and the amount of crust dough was not really enough to properly cover the whole bun, so it was only partially covered and didn’t look so good... It was my first time baking it, however it is absolutely different from original Chinese pineapple bread buns.... I would be really happy if you could provide a link for a good recipe, thank you in advance

This recipe definitely works... I baked my buns (50g or 80 each) in a 180degree Celsius preheated oven for only 13mins and it’s not raw. So 15mins at 180degrees will work. Baking time varies for different ovens, and it depends on the size of your buns that you’re making... so bigger buns of course would need more baking time. The dryness/wetness on the “crust” comes from the temperature of the mixture/your room temperature... it would be more dry when you use cold butter/bake in winter, and more wet if you use melted/soften butter/bake in summer. But if you really find it too dry, you could adjust it by adding little bit of milk/water or egg too...
