A viewer from Macau has asked for a simple recipe so that he can cook for his kids. This is it mate.
三人份量 For three people:
長通粉300克 - 300g of penne pasta
雞腿肉兩塊 - 2 chicken thighs
洋蔥半個 - half an onion
蘑菇200克 - 200g of button mushrooms
蒜兩瓣 - 2 cloves of garlic
龍蒿葉一湯匙 - 1tbsp of tarragon
忌廉200毫升 - 200ml of cooking cream
巴馬臣芝士碎四茶匙 - 4tsp of parmesan cheese
鹽適量 - salt to taste
黑胡椒適量 - black pepper to taste

其實唔止長通粉 幾乎所有意粉都要落鹽 要比個味道佢 就好似煎扒前要用鹽抹一抹一樣道理(除非你食得淡D或者想食健康D啦) 有D人會落埋油 防止D意粉痴埋一舊 其實只要水夠多夠滾 D意粉一路翻滾就唔會痴住 同埋意粉唔可以"瓊"乾 過冷河 煮意粉同煮汁係同時進行 意粉一熟就即刻立即馬上夾落D醬到 意粉上既水保持意粉濕潤同時可以達到收汁 (煮完意粉既水其實係澱粉水 同生粉水 粟粉水一樣有收汁既作用)

Cooking cream同你之前有條片整白汁雞既double cream有無分別

cooking cream在美國應該是whipping cream (30-35% fat), 而double cream (45-50%) 是比heavy cream (35-40%)還要多脂肪。我做bob 叔的白汁雞無double cream 用 heavy cream 代替。Ref: whatscookingamerica.net/Sauces_Condiments/CreamDefinitions.htm
