The hydraulic freight elevator has a louder motor than the Traction one but when the gate door opens and closes on the traction one it’s quite loud

I suppose the hydraulic one would be rarely used by anyone, it's much slower and serves less floors. Unless the other one is really busy.

It's not a nudge mode. It's a buzzer to warn the freight handlers that the doors and gate are about to close.
