To Make Ground Masala
Coconut - 3/4 Cup
Green Chilli - 5 Nos
Shallots - 9 Nos
Cumin Seeds - 1/2 Tsp
Curry Leaves
To Make Avial
Coconut Oil - 1 Tbsp
Yam - 1 Bowl
Snake Gourd. -1 Bowl
Raw Banana - 1 Bowl
Ash Gourd - 1 Bowl
Beans - 1 Cup
Carrot - 1 Cup
Pumpkin - 1 Cup
Country Cucumber - 1 Cup
Drumstick - 1 Cup
Mango - 1 Cup
Turmeric Powder - 1/2 Tsp
Salt - 1 Tsp
Water - 1/4 Cup
Ground Masala
Whisked Curd - 1 Cup
For Tempering
Coconut Oil - 3 Tsp
Mustard Seeds - 1 Tsp
Cumin Seeds - 1 Tsp
Hing / Asafoetida - 1/4 Tsp
Shallots - 6 Nos ( Optional )
Curry Leaves
METHOD
For the Masala Paste:
1. Take grated fresh coconut, green chillies, shallots, cumin seeds, curry leaves in a mixer jar and grind into a paste without adding any water.
For the Curry:
1. Take a wide kadai, add oil and heat.
2. Add the pieces of yam, snake gourd, raw banana, ash gourd, beans, carrot, pumpkin, country cucumber, drumstick, mango and mix everything gently.
3. Add turmeric powder, salt and mix well. Add 1/4 cup of water and cook the veggies for 10 mins on a medium low flame.
4. After 10 mins, add the ground coconut paste and mix everything well.
5. Next add smoothly whisked curd and mix well. Cover and cook for 5 mins.
6. For the tempering, take coconut oil in a tempering pan, heat it and add mustard seeds, cumin seeds, asafoetida.
7. Once the mustard seeds start splattering, add shallots and curry leaves.
8. Transfer the prepared tempering to the curry and mix well.
9. Avial is ready to be served hot and nice!
Avial is a South Indian mild flavored, coconut & curd based gravy curry. This is very popular in Kerala and Tamilnadu. In Kerala particularly, avial is a must have during festivals or any special occasions. They all usually have avial with appam, idiyappam, parotta, adai dosa etc. But if you want, you can also enjoy it with regular dosa or any roti. Very neat presentation and good English, I'm from kerala after adding the curd swich off the stove and We are just add fresh coconut oil and curry leaves and close the lid and keep it aside for 5 minutes Then will mix it

Authentic Kerala Avial, we don't temper it . Once the veggies are cooked, we add either curds or raw mango pieces or thick tamarind juice. Finally add coconut oil and curry leaves and just mix it. Will definitely try your version, Hema! 👍😊

Nice. We don't do oil tampering in my place. Just pour raw coconut oil with fresh curry leaves. Rest all same. But will try yr version one day. Thanks ❤

Yes no tempering for avial. You may add fresh coconut oil and crushed shallots and curry leaves finally close and keep.

We don't temper avial...we use raw coconut oil at the end...and also we don't put raw mangoes if we are using curd since it can increase sourness... rest everything is perfect ❤

Authentic avial we do not add mustard seeds or onion tempering.Only coconut green chillies and jeera is ground to a fine paste.You have to whisk curd which should be slightly sour.You are not showing the correct recipe
For traditional aviyal.We should not put mustards
