AVGOLEMONO SOUP - CYPRIOT FAMILY RECIPE. In this video, I'll show you how to make Avgolemono soup (Cypriot). My husband's Cypriot family taught me how to make this Homemade Made Easy soup. It's a classic Chicken and Rice soup, thickened with eggs and spiked with lemons. Seriously! The Best! Chicken and Rice soup you'll ever eat, Greek-style.
INGREDIENTS NEEDED:
Avgolemono Soup
recipe by shereen pavlides
{serves: 8 - 10}
for the chicken:
1 (4 pound) organic roasting chicken
3 tablespoons canola oil
kosher salt / freshly ground black pepper
1 spanish onion - peeled, quartered
1 large lemon - cut into wedges
1 large bunch fresh thyme
for the chicken stock:
1 whole chicken carcass
4 - 5 celery stalks
4 carrots - peeled
1 large onion
1/2 tablespoon black peppercorns
2 bay leaves
1 small bunch fresh thyme sprigs
1 small bunch Italian parsley with stems
for the soup:
1 1/2 cups long grain white rice
4 large eggs - room temperature
1/2 cup freshly squeezed large lemons (about 3)
3 tablespoons chopped parsley

    My Yia yia rest her soul, made the most incredibly amazing Avoglomono soup. It's been years since I've had a bowl. I can still taste it all these years later...I'm 65 now. I must make it in her honor. I love you and miss you Yia yia. ⚘❤

    I'm Greek cypriot and the chicken is NEVER roasted,it's boiled in water and the taken out and the water used to make the soup as it will have the chicken flavour from the boiled chicken.

    I am also Greek Cypriot and I 100% agree with this comment! This is true. We boil the chicken in water first and once it has cooked through we remove it and use the water (broth) to make the rest of the soup! Then once the soup is finished we add the cooked chicken back in pieces or serve it on the side. I have never heard or seen people roast the chicken before. This just seems so wrong to me lol.

    Roasting it adds a ton more great flavor than you would ever get from just boiling it in water. It’s a no brainer, and I’m pretty sure her version tastes way better than the authentic version discussed here. Just because a recipe has a tradition doesn’t mean a good cook can’t use common sense to easily improve it, as she’s done here.

    @@benjaminkenobi21 the roasted bones will certainly make a better stock but the roasted meat added to the soup will never taste as good as the meat being boiled. She could bone the chicken and do a "boil the meat- roast the bones" combination but she didn't. I have done this soup the way she did it before(only because i had left over roast chicken) and i can guarantee to you boiling the chicken tastes far better than adding it roasted in this soup

    I’m also Cypriot but born and bred in the U.K.. we make ours slightly different but by looking at yours it looks amazing and I’m sure just as good as the ingredients are the same 👌🏻

    so interesting i’ve never seen it with chicken!! if you are a fan of froth in soup, beat the lemon with the eggs for 2-3 minutes on high speed before adding some broth to the egg & lemon mixture! learned the recipe at 7 with my YiaYia :)

    My mum used to make her own stock but I just use liquid store brought chicken stock because I’m too impatient and it turns out just as good! We’re also Cypriot

    Omggggg I love this soup. Hard to find made correctly and delicious. I've always been hesitant to make...but why!!?? I can make a great chicken soup from scratch sooo...🤷‍♀️? Well, the answer is Greek Diners in my hood lol. However...must make!! Thanx for breaking it down. My Italian fam (sisters) are so resistant to non traditional soups. But WHY!!??     Mrs. Shereen, great hearty recipe for soup, very close to mine, i will have to try the fresh lemon. For the amount in your recipe, i add 1 level teaspoon of poultry seasoning & any brand will work , even store or dollar store brand as i have tried several & they all taste the same to me & the instapot is a real time saver, well worth the money to purchase one for folks, subs & viewers alike. God bless you all., btw, that was one plump chicken, lol, here in rural Kentucky we call them yard birds, lol.

    Steve Logan haha. I agree and he made a mess of my oven too! I usually buy organic which doesn’t nearly splatter as much grease in the oven, plus I find them tastier. Yard bird, lol, I’ll have to remember that.

    I assumed shareen was only a middle eastern name. I thought you were maybe Lebanese or possibly Iraqi Christian. My father is Egyptian but my mom is a mutt mix between French, Italian, and Greek mostly (from Samos)lol. Thanks for the amazing recipe. I’ll try to make it this way!!!

    I am usually a scathing critic of youtube home cooks. Missing so many steps and poor technique... but this is one of those VERY rare videos of someone doing something well!! I even liked that you roasted the chicken instead of just boiling it!! I hate that criticism. Just because the tradition is one way, or as I like to put it, just because the first people who made this soup, made it a particular way, doesn't make it right. Traditional recipes should always be adapted once we KNOW something better!! Roasting that chicken will improve that soup. End of story!! Wonderful recipe and well executed!!

    While I understand what you mean about making a recipe your own, then it is not a traditional Avgolemono soup! I am a Greek American, My family is from the island of Chios and the Soup varies from island to island. We don’t roast the chicken either, we just boil etc but we also don’t put parsley in either. While this soup can be made in different ways Sheeren let’s us know what “version” she would be making, that was different than she said. I only comment because of your comments or I would not say anything. Our Greek culture has been appropriated by many cultures and there are things that we hold as part of our traditional foods. It is nice to see people trying Greek food and putting their spin on it, it doesn’t mean that “the spin is better” it’s just her way.

    Mediterr. phenotypes also come in variaties. It's not only dark olive skin, black eyes and black hair, you know. (in fact, pitch-black eyes at least in Greece, are not common at all).
