Waakye has become popular in Ghana in recent times. Majority of people cook it with sorghum leaves or waakye leaves as it is called. Although the sorghum leaves have it health benefit, It is locally prepared without the leaves. The original recipe includes beans, rice and saltpetre or bio carbonate of soda. The perfect ratio of rice to beans is 50/50 however, you can adjust to your taste.

2 cups of beans
2 cups of rice
saltpetre or bio carbonate of soda.
salt to taste

Did you use red leaf at all ??or just the salt bitter alone gave the waakye color red.

@@preciouscheremeh4181 she did not have the salt bitter so she substituted with Kanweb(she soaked two or three Kanwe with 4 cups of water ahead of time before cooking the brown water from the soaked Kanwe with beans for about 15 mins before adding the water and then added a tablespoon of biocarbonate she did not have salt butter she said

Many thanks for sharing. I really love waakye but I'm so scared of cooking it because I feel I might fail lol. It's the only food that makes me feel nervous. After watching this video, I now want to give it a go. Please could you tell me exactly how and when to use the bicarbonate of soda to get that colour and the quantity please? Thank you, I did not soak the beans, I used straight ahead however, you can soak it if you wish to, its said that it helps reduce gas If you do so.

Hello. Can you make jollof recipe with precise measurements? I know yours will be the best. My problem with so called recipe videos are.. the measurements are never precise. They will be like.. “2 large onions and 3 large tomatoes..” but then they are holding 2 small onions and 3 medium tomatoes 🤦🏽♀️

Hi, I’m a new follower and would love to make some waakye for my partner so I’m really happy to find a recipe that doesn’t involve the leaves. I just have a question about the bicarbonate of soda.. yours looks like a rock form all I have seen is the powder form that you would find in the supermarkets- will this have the same effect or do I need to try to source the solid form? Thanks :)

If it's ok to use bio carbonate of soda then you can coz there is no other alternative otherwise then use the leaves to get the colour. I hope I have helped
