Just had somme last night - as great as ever! The jerk ribs we made with sweet red pepper jelly glaze were amazing!

Allspice is a pepper variety. The seed is referred to as a pepper berry before it is dried and ground for spice.

@Trelli28 The latin name is Pimenta Diocia. "Pimenta" is latin for pepper. it is a berry to start with - just like black pepper etc.

I met these people at GRILL FEST in Minneapolis and again at Rib Fest last week. The sauce and wood made the best, authentic chicken I ever had. At home results were same - on gas grill too! The wood chips and pepper jelly are my favorites and a little goes a long way. TIP - stick the jerk marinade UNDER the chicken skin. For ribs, make a dry rub and use the wood to smoke. Brush with the jelly at end. Pork ribs worked best for me.

@jahlionpr There are others - 1 in particular that I believe is the best (besides my own recipe:) They are sauces and rubs by "SPUR TREE" beats the Jerk outa Busha Browns and Walkers wood hands down!
