Born in the bodegas of Spanish Harlem, the Chopped Cheese Sandwich is a true New York Original. Not a cheese steak, not a burger. This is a CHOPPED CHEESE SANDWICH! Enjoy!

The bodega in East Harlem looks like many others, its awning advertising coffee, candy, and hot and cold sandwiches. But it is the chopped cheese that draws people from far away.
This bodega, Hajji’s, is in the midst of a name change to Harlem Taste, an effort, perhaps, to harness its reputation as the birthplace of the sandwich.
As with many food dishes, the chopped cheese’s origin is obscured by rumor. Perhaps it was an attempt at a Philadelphia cheesesteak without the right ingredients, or the result of a creative flurry in the hands of an inebriated chef. Whatever it was, it seems to have been born at the intersection of taste and necessity.
But talk to some of the workers at Hajji’s and they will tell you about Carlos Soto, a longtime deli man who they said died of cancer in 2014. Carlos created the sandwich at some point during his more than 20 years working at the store, they said.

    All but the mustard...also not sure on adobo...might be some other kind of chicken based flavor but it’s not just a burger w salt/pepper so he’s better than most of the others I’ve seen. Looks awesome

    I lived in NYC many yrs ago and was privileged to have one of Carlos' chopped cheese classics many times. It was an amazing cultural experience. The whole area of Harlem is much safer now.     This is one of the coolest burgers/sandwiches that I've hadn't heard of before seeing a few videos, including this one. I need to make this once I can find a decent and fresh hero roll. I watched this video when it came out 3 years ago and I still haven't gotten around to making it yet. Shame on me. Spanish Harlem has contributed one of the best sandwiches ever made. This should go in the Smithsothian.

    Looks killer. In regards to mixing ketchup, mayo and mustard, what’s wrong with that? I worked in McDonald’s in Israel and instead of a Quarter Pounder, we had a Royale (yes, like in France/Pulp Fiction 😂) and that came with lettuce, pickles, tomatoes and onions and a thousand island dressing that was broken down to me as basically mustard, ketchup and mayo all mixed together.

    Because some people are just weird. lol The combo of mayo, mustard and ketchup mixed has always been one of my favorite sauces to put on a burger. It's actually what Jack in the Box used as their "secret sauce" a long time ago. I miss them doing that.

    We have that at McDonalds in the US its a secret menu item called the Daily Double. This is also how the Whopper is made. But in the US the burgers are made so the ketchup doesn't the lettuce. Ushually the tomatoes are used as wall andbthe ketchup only goes on the meat side of the burger/sandwich.

    Greg, you just opened my eyes to a whole new world! Ive never seen this but good lord I would love to try this! Amazing. Ive got no problem with the ketchup and mayo either. Bravo!
