The softness is probably because of Wheat flour. The restaurants use maida.

@@rachanashah9400 I am not sure but I think it will not be great as the dough needs to stick to the pan so might not be a great idea to use Non stick pan.

Of course, Merlyn! It has no yeast, so aslong as you cover the dough with plastic wrap so it doesn't dry out, you can store it in the fridge.
