For the birdman cult, the short answer is Europeans and the final collapse of the Rapa Nui statue carving culture. The first arrival of Europeans was in 1720, followed by another in 1770, which both observed the moai still standing, by the next visit in 1774, many of the moai were toppled and all were toppled by the 1830s. The toppling coincides with a coup that ended the dominance of the religion that worshiped the moai and the completion of the rise of the birdman cult. After centuries of warfare and a large reduction in the population, the people of Rapa Nui found a “peaceful” way to determine the dominant village. Each village would designate champions and they would race to a nearby island. The elder of the village whose champions was able to find the first sooty tern egg of the year, would be declared the birdman and their village would run the island for the next year. Rinse and repeat until the 1860s when Christian missionaries put an end to the practice. The race itself was very dangerous as most champions would die from falls, sharks, drowning, and, of course, other champions. The moai that are standing today were primarily stood back up by archeologists and researchers In the mid to late 20th century.
