    The Complete Rojak is with tamarind water, pineapple, turnip, cooked bean sprouts, cut dough sticks, prawn paste, sugar water, chilli, cucumber, semi-ripe mango, ginger flower sometimes with century egg and dried cuttle fish and sprinkled crush peanuts.

    3:20 the Ah Zai Chicken Rice mentioned by the Chilean couple here is actually my favorite chicken rice stall at Maxwell Food Centre. I find their chicken more tender and the rice less oily compare to Tian Tian Chicken Rice. Also, the owner (Ah Zai) is actually an Ex-Chef from Tian Tian.

    That "Some kind of Fruit" is most probably Sugar Cane juice... You should try it by itself or either with Lemon or Sour Plum... Which give the sweet sugar cane a kick with a touch of sourness...

    Respect, you have an adventurous palate. Few foreigners can take the pungent shrimp paste in the rojak. It is an acquired taste, like durian and blue cheese.

    Chinese rojak is made with shrimp paste, tamerine water, torch ginger bud, sugar, and crush peanuts as the base / dressing. We usually add turnip, pineapple, cucumber, bean sprouts, some time we add you tiao fried dough and dried tofu. Some place would add green apple or mango this to balance off the sweetness of the dressing.

    In Singapore the system for paying via e-payment is quite new to outdoor hawker/food centres as most of these stall are run by older generations. Even as local we need to have cash on hand to eat at these cheap food place; hawker/food centres. Stall owners prefer cash as they will get the full amount of what customers pay, debit/credit they will get less due to using visa/master/amex services by few cents or percentage. Cards are mostly accepted in malls. And those QR codes you see pasted on stall are only for banks user for UOB/OCBC/POSB/DBS, which are most local go to banks. Those QR are as equivalent as receiving cash just without the need of change and physical deposit to banks. ENJOY YOUR JOURNEY IN 🇸🇬!

    The inside of Oyster Cakes are vegs with minced pork with seafood... Usually you'll get a piece of oyster (hence its name) and prawn/shrimp... And yeah, its oily because its deep fried...

    The rojak that you had, ingredients include pineapple, cucumber, bean sprouts, fried tofu, fried dough stick (youtiao in mandarin)., and what you know in North America as jicama which the lady said was turnip. I’m not sure jicama and turnip are the same thing but I doubt so. Sauce is made of fermented shrimp sauce and the sourness comes from tamarind, peppered with calamansi, calamansi rind and ginger torch which is the flower of the ginger plant. And of course lots of roasted crushed peanuts which you already know

Regarding our Singapore's reputation as a cashless society, the truth is most places accept digital payments, but these are linked directly to our local banking system rather than through the credit card networks. The (US) credit card companies charge extremely high merchant fees and so most small businesses cant afford to take credit cards. But many Singaporeans, myself included, no longer carry cash w us!

    Bandung water its very tasty. Its mix rose water @ evaporated milk and liquid sugar. You must find Hajah Maimmunah Nasi Padang its Malay Authentic food, this stall are very famouse in Singapore. Mark Wien try 33 dish at Hajah Maimunah restaurant. Located at Joo Chiat Street and Arab Street at Jalan Pisang.

    I have not eaten Tian Tian chicken rice for a few years. Recently, I had it last month and noticed the drop in standard. It wasn't as good as before when they had just a single stall circa 1990 to 2000.

    Maxwell Hawker centre is one of those tourist hawker centres...So expect to pay tourist price at about 50% higher than local hawker centres and food will also likely be adjusted for tourist. Basically, if more than 50% of the customers in that hawker centre are tourist, that is a tourist place. Locals usually avoid those. It is always amusing to see these youtube videos where people "Claim" to have found cheap food when they are paying so much more. As of 2023/2024. at local hawker centres Regular chicken rice, local noodle dishes such as fishball noodles and other local dishes usually cost around SGD4 - 5 Side dishes such as rojak or spring rolls cost around SGD2 to 3 on average. For people doing research on the internet, they will usually find Maxwell, Newton, Lau Pa Sat. At Chinatown there are 4 hawker centres in the area, skip Maxwell and try Chinatown Complex 2nd floor hawker centre, People's Park hawker centre or Hong Lim hawker centre.

    @@BrentTimm Depending on what students you refer to. Typically, students will visit hawker centres near their school. There are over 100 hawker centres in Singapore. If you are serious about finding real local food, stay out of tourist spots. Explore the heartlands, Ang Mo Kio, Toa Payoh, Yishun, Tampines. Otherwise, your content will be just like any other tourist vlog.

    That banh mi is half full. Well, for the price of just 2 bucks, you have what you get. For me, the best banh mi is Banh Mi Saigon in Ang Mo Kio. Yes, it's twice pricier. But the bun filled up to the brim.

    LOL... Rojak doesn't have palm sugar... The sweetness is from plain old cane sugar... The sauce is a fermented shrimp paste... The sourness you are talking about is most probably either lime or calamansi juice added into the sauce.

    The green drink is sugar cane juice. Bandung is Rose Syrup (melted sugar with rose extract n red colouring) with unsweetened evaporated milk. Never pour the green chilli with the soya sauce onto the rice as it’ll make the fried rice taste salty. 🤦‍♂️ This is Chinese version Rojak (there’s an Indian version Rojak, which is entirely different) the rojak main sauce is prawn paste without it it’s not rojak. Popiah skin is made from rice flour. Enjoy!
