Asian Food: Prep & Cook Raw Bamboo Shoots

Dabong, labong, also known as bamboo shoots. It's delicious, healthy, and so darn hard to find! And in most cases, you are usually buying it from a tin can from your favorite grocery store. In this video, I will show you how you can easily prepare bamboo shoots from scratch, and by scratch I mean buying fresh labong or dabong from your farmer's market.

    @@NoFrillsMumma it didn't, I was at my sister's at the time an some rainstorms stopped me. It's very bushy and overgrown there now. I will experiment if I get the opportunity.

    OMG! It's so weird watching a left hander cutting (I am left handed!). So used to seeing right handers cutting. I have picked fresh shoots from my garden in France this morning, only a 1/4 the size of the ones you're cooking. Thanks for the info on how to prepare and cook them.

    You can keep them frozen. I suggest portion them into cooking volume (zip lock), and take as needed by thawing or quick blanch before using it.

    I cut the bamboo shoots down to the white part like you said. I bit into one and it tasted bitter but it wasn't that hard so I stir fried them instead of boiling. I used my favorite Thai sauce. The bamboo shoots were so bitter I couldn't eat them. Did I buy a bad one or are they always like that?

    So sorry to hear about your experience with your stir fry. Actually, you have to boil the bamboo shoots first and not cook them directly for your main dish since you need to take out the bitterness of the shoots first. That's why you were getting that bitter taste on the stir fry.

    baboo shoots you must boil it first to remove the bitterness and to remove the cyanide poison from the bamboo. if you don't do that you can put yourself in danger from cyanide poisoning. if you eat a lot of untreated bamboo.

    Hi great video, like the boiled water after boiling vegetables can be used as it's healthy, can you use the water after boiling bamboo shoots? It might contain a lot of goodness from boiling the bamboo, will it be bitter? Thanks

    True story? I was literally about to dig up some bamboo shoots at the back of my sister's house. Any way to tell if a bamboo variety is edible? Edited to add: I looked it up and I am just going to have to boil the heck out of it. It's a large species anyway. Thanks.

    @@melgoolcharan6816 best way identify is Clumping vs spreading .. more spreading variety are edible then clumping primarily Phyllostachys ALL of which are edible . But don't use clumping vs spreading as your only ID method Leaf size/density Culm (Pole) color/size groove. Shooting Culm size /coloring is the most reliable , but is only possible a few months out of the year . If your not sure ask your sister.     You will have to boil it first to remove the bitter taste and to soften it

    Then u look for other recipes to use the bamboo shoots in. She can't show you here as there are tens to hundreds from stir fry to soup.

    You threw out the broth of the Bamboo, why? The process of boiling food is to change the texter for human conception while extracting the vitamins and minerals. So, when you throw away the bamboo broth, you're actually just consuming the fiber with little nutrients than making a soup or drink out of it. An example of this is taking out the juice of any fruit and throwing the juice away to consume the fiber. When you think about it, it's weird. Health wise, the more biter the vegeable, the more potent the vitamin and minerals.

    Lols not all bitterness is good, in some types of food bitterness means it's poisonous.

    bamboo naturally has cyanide in it, a deadly poison. you can die from eating untreated bamboo if you eat a lot of it. boiling the bamboo for 30 minutes will remove most of the poison and remove the bitterness of bamboo.

    Some of the bamboo shoots are dangerous to consume without boiling, which is why you boil it, which is also why you don't want to consume the water used to boil it.

    Boiling of Bamboo shoots is a MUST. The toxins come into the liquid part after boiling. It must be discarded. Not good for health. Hundreds of videos to prove that.
