elderflower cordial
2 1 liter bottles
・Elderflower---200g (about 20 plants)
・Hot water or water---1 liter
・Granulated sugar----1.5kg
・Lemon (unwaxed)---6 pieces
***Disinfect containers and kitchen tools with boiling water. You can also use the dishwasher.
1. Use elderflowers as soon as possible after picking them. Remove excess stems and gently press and wash them (they may have small dead parts or aphids attached). Shake it out of the water before putting it in a colander to remove any dirt. Please drain it in a colander as large as possible.
2.Put hot water and granulated sugar in a pot and heat. Once it boils, remove from heat and let cool. While the syrup is cooling, separate the elderflower into florets and drain well.
3. Grate the yellow part (about 3 pieces) of the lemon peel and add it (the white part will be bitter), cut the lemon in half after rind and add the lemon juice to the syrup.
4. Put the elderflower into small florets in a container and pour the cooled syrup over the top. Cover with a lid to prevent dust from entering, and leave in a cool, dark place for 1 to 2 days.
5. Strain through a coarse strainer (first time) or remove the flowers and lemon peel. If you try to filter through fine sieves all at once, the sieves will quickly become clogged and it will take time. Once the syrup has been filtered, use a fine mesh and funnel to transfer it to the storage container you prepared earlier.
It will last for 2 months in the refrigerator. Dilute 1 part syrup to 4 to 5 times with water, hot water, or sparkling water. Add lemon, lime, mint, etc. according to your preference. The syrup itself doesn't have much acidity, but I think it would be more fresh and delicious if you added something like lemon to it when you drink it. It is very delicious when added to wine or juice, or used in jelly, sweets, yogurt, etc.

@@sofiavalenzuela9782 Sofia, I wasn't trying to be a hateful faceless youtuber, I simply wanted to enjoy the video. For me it was like looking at things while driving by in a car. If I make No comment she learns nothing, she gets no thumbs up nor would I subscribe. How does she gain by that? I could just be one of those people who look and move on. But I saw some worth in what she was doing and wished I could have enjoyed watching.
