🍎 Ingredients
• 2 small turnips, peeled and cut into 4 pieces each (I used 4)
• 1 cup / 225 g. stale bread , cut into cubes (I used 3 cups)
• 1 cup / 225 ml. heavy cream
• ½ lb. / 225 g. chicken livers, chopped
• ½ bunch flat parsley (I used 1 whole bunch)
• 1 shallot , finely chopped
• 1 egg yolk
• 1 lb. / 450 g. pork sausage , squeezed from casing and crumbled
• salt and pepper
• 1, 6 lb. / 2.7 kg. chicken or capon, (a big old bird)
• 6 whole cloves
• 2 medium onions, peeled and cut in half
• 6 leeks, white part only, cut in half
• 4 carrots, cut into 3 inch sticks
• 2 celery sticks, cut into 3 inch sticks
• 1 bouquet garni, (thyme, parsley, bay leaf)
• 1 Tbsp. / 14 g. whole black peppercorns
• 1 head of cabbage, cut into 8 pieces
• 6 small potatoes (I used 12)
• ½ lb. / 225 g. cornichons
• ½ cup / 112 g. sea salt
• ½ cup / 112 g. Dijon mustard
🫕 Equipment
• mixing bowl
• kitchen string
• trussing needle
• HUGE pot
• 3 small ramekins
• ladle
• food safe gloves (highly recommend)

    So French indeed. Allegedly, the good king Henri IV (1553-1610) once expressed the wish that every family could cook a "poule au pot" on sunday (as en evidence of wealth). That's what we are taught in school. Centuries later, any French having a poule au pot will still think of Henri IV.

    @@mitchmai I honestly really like the more “adventurous” videos when you cook the so called less desirable cuts of meet like liver or heart. It’s so interesting to watch how to prepare these and cook them bc I’ve never cooked them in my life but always looking to expand my knowledge. As a fan of AB you’re doing a great job. 🔥🔥

    One of the things I enjoy about a veg heavy dish like this is the variety it gives you. You don't need a lot of meat on your plate to feel like it's a "full meal and several sides" even though it's a 1 pot dish. Also, this is a great classic that we also cook up in Quebec, Canada from those French cooking roots. Sausage stuffed chicken cooked with root veg and cabbage.

    As a kid, my mom would do this dish all the time. I hated it, but as I grew up, I started to appreciate the neutral flavours of boiled meat and veggies

    wow fast. if your cooking career goes south, you would do well in OR, post-op tech. you could truss well. truly unique dish. love the meatb alls. i wish i had some cut in half over buttered baguette... the kind you have to tear because the crust is so chewy! sorry, thats the keto talking. another stellar performance. plus a great cameo from Julia. what more is there? check check!

    Amo mucho esa cocina chiquita y un poco incómoda. Me imagino que vos no, pero es muy hermoso verte hacer esas recetas con muebles y herramientas que salvo un par de honrosas excepciones son más o menos los que tengo yo en mi casa de 2 x 2 en el muy poco elegante barrio de Once.

    @@mitchmai I really love that small and slightly uncomfortable kitchen. I imagine that you don't love that it's small, but it's very beautiful to see you make those recipes with furniture and tools that, with a couple of honorable exceptions (for your part, I say, my blade is almost as dull as my nose) are more or less the ones I have in my 2 x 2 house in the very inelegant neighborhood of Once. Done and done! =D

    I always seem to fall into the insane amount of veggie trap all of the time. Follow the recipe and then end up with a bit of meat and a mountain of veggies. Nothing wrong with veggies but most of the times there are way too many. Oh and leave my patootie alone! 😆
