How to get log data for business and IT processes? We cannot track time for time spent on each IT application due to data privacy

The data log is typically extracted using ETL tools. ETL stands for 'Extract, Transform and Load'. A popular ETL language/tool is SQL. You can read up on how ETL works online. With regards to your question on timestamp: consider putting protocols in place that allow for data anonymization during the ETL process. That way, you can still apply process mining without infringing on privacy. Hey I have a questions regarding the modules such as order to cash or puchase to pay. Are these templates and dashboards from celonis itself where you can just apply your own order to cash processes? I am wondering because Celonis only have 6 templates but a company has many more processes

Those are sample datasets that Celonis provide users to experiment with. They are derived from/ match with some datasets commonly found in the most common ERP systems (e.g. SAP). So there are about 6 that focus on some popular processes (order to cash), but you can upload your own using the 'quick upload' button.

With the expression 'from the get go', I mean that you can use BPMN modelling to design your process BEFORE implementing an ERP system such as SAP. So that you can design processes from the start (before any data is generated). Once the designed process is implemented (for example the ERP system is operational), it will generate data that you can then use to compare with your pre-defined process model (using conformance checking).
