I have looked for this recipe for 40 some years. When I mentioned raw eggs they said it couldn't be done. This is my Grandma's recipe and you brought it all back for me. You are my new go to show. Thank You. (She also made a chicken pot pie that was made out of squares of dough. Maybe you've heard of this also).

The older recipes are the best in my opinion! I don't think I've seen that version of a chicken pot pie, I'll have to look around. I bet it's delicious!
Oh my goodness. Every potato salad I've ever made required a huge pot boiling on the stove. This is incredible. No more boiling and such.

I was raised in an Amish community. Potato salad was a staple, and trust me, that dressing was never cooked and was delicious.

Your way of cooking the potatoes gives them so much flavor. I could eat them plain. I may cook all of my potatoes in the vinegar and sweet pickle juice.

Interesting! My grandmother grew up and lived in PA all her life, I would stay with them all summer and she'd make Pennsylvania Dutch potato salad, it had eggs, mustard, onions, celery, vinegar, a little sugar and mayo (relish was optional) and it was and is my favorite potato salad, I never saw the cooked method before.

I hadn't ever heard of it before either. There is not a lot of information on Google and it seems like it can be done either way. I figured there are tons of recipes for the uncooked method, so I'll show a different way.
Oh my how did I miss the news about a stainless steal pot for the foodie! Did the lid come with it? Never heard of Amish pototo salad but now it will be served this July 4th!!! Thank you so much for all your hard work to make our cooking skills impress others with our Ninja foodie!!!!

You should try the Starfrit Rotato Potato. I hate peeling potatoes or i should say i use to hate. I bought this to peel potatoes, lemons, cucumber, sweet potatoes, almost anything that needs peeling. I cut top and bottom off, i find it makes it easier to peel. It peels all different shapes of fruit and veggies. I bought spare blades on Amazon. com . I haven't had to change blade yet. If the item is to big for the rotato simply cut potato 🥔 or what ever down to fit.

Ingredients: Potatoes 1 egg ¼ cup milk ½ tsp cornstarch 1 tsp Dijon mustard 1 tsp sea salt ½ tsp garlic powder ½ tsp onion powder 2 tbsp brown sugar Dill pickle juice or vinegar (optional) Procedure: Dice the potatoes into bite-size pieces. In a pot, whisk together the milk, cornstarch, mustard, salt, garlic powder, onion powder, and brown sugar. Beat the egg and add a small amount of the sauce to it to bring it to a similar temperature. Then add the egg to the pot and whisk to combine. Cook the sauce over medium heat until it thickens and reaches a temperature of 135°F, whisking frequently. Place the diced potatoes in a pressure cooker and pour in enough water to cover the potatoes. Add dill pickle juice or vinegar to the water if desired. Place 3 large raw eggs on top of the potatoes. Cook the potatoes and eggs in the pressure cooker for 1 minute, followed by a 5-minute natural release. Manually release any remaining pressure and then remove the eggs and potatoes from the pressure cooker. Place the eggs in an ice bath to cool and stop the cooking process. Drain the potatoes and mix them with the cooked sauce. Cut the eggs into small pieces and mix them into the potato salad. Chill the potato salad in the refrigerator for at least 4 hours or overnight before serving.
This will be my father's day potato salad. I like to use red potatoes - will this change anything?

It will be fine with them peeled. The size of the cut is the most important thing.
I will try this! I think I'll add some onion tops and before I put the dish in the fridge, I'll lightly dust Cayenne pepper on top! :)

I was born and raised in a rural area of PA around the Amish. I've been to Amish dinner events like at local community centers and know the type of food they eat. My dad's side of the family is German, Pennsylvania Dutch, and have lived in the same area for 240 years. Recipes have been handed down through the generations, and I grew up eating a lot of homemade German food, which isn't much different than Amish food. I never knew the Amish made their potato salad differently than the way the Pennsylvania Dutch do, which is still how I make mine. Maybe the Amish in a different region make it this way. I'll have to try it.

I didn't either and honestly there isn't a whole lot of information that I could find. I find it so interesting how different areas have such difference influence over food. I grew up in MD and I have never once heard of a cooked dressing until I go that message. I was so intrigued, I wanted to try it. I have to say it is the best potato salad I've ever made. It's sweet though, so if you don't like sweet, definitely cut back on the sweet pickle juice and increase the mustard.

@@TheSaltedPepper the only cooked dressing I ever knew of was bacon dressing. I made wilted lettuce salad with it, soooo good and great when the lettuce starts to go bad. There are 2 ways to do it, fresh lettuce with the cooked dressing poured over it or cook the lettuce with the dressing, i do the second one, my husband loves it
Looks wonderful louise. Do you have that storage lid in your Amazon store? I don't see it. I've had so many times needed a lid for the Foodi inner pot and just had to use cling wrap. Thanks

burgers, hot dogs, chicken, steak any kind of BBQ foods. I've even add ham to my PA Dutch PS and eaten it for lunch

Have you ever tried German Potato Salad in the Ninja Foodie? Its served hot and had bacon in it.
How would you make this without cooking the sauce? You should go ahead and film the other version of this.

You would do the same technique and just add in your mayo, mustard, seasonings at the end and mix. Skip the egg and the cornstarch.

@@TheSaltedPepper it's so much easier, I use it for egg salad, although your method was interesting, I never thought about the pre-pressurizing being long enough for the eggs but it made sense once you said it.

I think this is so much easier than any other way I've made potato salad. Of course, you don't have to do the cooked dressing part!
Put your potatoes in basket and keep them dry.

It doesn't keep them dry because they are cooking with steam and the steam reverts back to liquid form before the lid is opened, but I know what you are saying. I have done that before, but I prefer to pull some of the starch out of the potato usually and putting them in the water helps with that.
