    Biko is glutinous rice cooked in coconut milk (gata) and brown sugar. Ginataang bilo-bilo is made with glutinous rice balls, sweet potatoes, saba banana, ube, taro, cassava, jackfruit and small tapioca pearls (sago) cooked in sugar, water and gata. Turon is very easy to do you can easily do it for your family. You will only need lumpia wrapper, saba, brown sugar and jackfruit (optional).

    CORRECTION! Latik is NOT caramelized grated coconut flesh. It is the solids formed from coconut milk curd when coconut milk is simmered for a long time until it releases the coconut oil.

    Glad to know that Lauren is adventurous in food 😊💝 Merienda, champorado, maja blanca are just some of the spanish influences in our culture. In time, you will realize more of that in our language, names, and cuisine. And some habits like siesta, noche buena, merienda, etc. Twins Sol&Luna had vlogs about it too. 💝

    My grandma used to make ginataan for us kids, and bilo-bilo would refer to the chewy dumplings made from "pure malagkit" (she was always proud that she handmade them from quality glutinous rice). The small translucent balls are traditionally from the heart of the sago palm, although nowadays it might be made from tapioca (cassava) because that's what milk tea uses. The best latik (in our region) is not made from grated coconut but from coconut cream that is fried to release its own oil, and the solids that remain are latik. Very umami. Turon is made specifically from cooking bananas (saba) and not the usual eating bananas, the cross section is squarish not round and they are short and fat, so you have to slice them for turon. The best turon also has stands of jackfruit (nangka, langka) which give a nice flavor surprise.

    Ginataang BIlo-bilo should have the Bilo-bilo which are glutinous rice balls. They are usually colored light violet like Ube, but it's just food coloring. Turon usually has jackfruit too. Me, i prefer Bibingkang Malagkit over Biko. They are similar but Bibingkang Malagkit has lots of Latik which is not what was explained, hehe. Latik is caramelized coconut milk or cream (Gata).

    Oh, you passed by Balete Drive in New Manila Village. Well, that white lady may just be folklore😂. Next time you pass there, you may want to focus more on the huge, grand houses of the old rich in New Manila, and the majestic trees that line their fences. 🏡Yes, street food/s (scooter supplier even better than vendors parked in the street🤣) are soo yummy; most of the time safe- just don't buy in the late afternoons (coz the're just the left-overs/unsold stuff), or uncovered stuff, or if the vendor coughs, LOL🤣 Allan is such a good educator. Love the Turon (Banana fried with egg wrapper), Champorado (rice chocolate with milk & sugar), & Ginataang Bilo-Bilo (sticky balls, pearls & fruits in coconut milk), Maja Blanca ( I think made of cornstarch & corn; yes custard- type). Filipinos have a sweet tooth, so you'd enjoy, Lauren, if you love sweets; just watch vs. Diabetes.🤣 You ate very little- your tummy won't have a violent reaction to the new stuff you tasted.🤣Good to know you took your kitty to the vet. 🐱Enjoy Philippine life!🏝
