It's passable but not the same. It's "like" but not exact. Too many things that are different.
Korean and Mexican fusion works so well. Kimchi quesadillas are killer! Bulgogi tacos are bomb! Ucha with carne asada... o m g. 🇲🇽❤🇰🇷❤🇲🇽❤🇰🇷

La birria es MEXICANA. Se inventó en Jalisco, incluso hablando de ese estilo de taco lo único estadounidense es que le añadieron crema y esa salsa anaranjada, el resto ya se hace en México desde hace mucho mucho tiempo.

Actually, american tacos are traditionally hard shell while Mexican tacos are traditionally soft shell. The hard shell is definitely american.

Tomato wow looks yummmy
Fantastic technique overall, I'd just add toasting the whole chili pods on the flat top for a few minutes per side just to bring out more of the delicious flavor of the chili's and the natural oils in them. Remove the stem and seeds and cut into pieces before blending. Looks delicious.

A very well made Birria I have thought of preparing it the same way by roasting the meat and bones before braising adds lots of flavor
this is what im talking about. With gloves clean area , well cooked meat for a taco..omg!! I really LOVE the hygiene of korean specially the clear mask (that cover nose mouth) ilove that. Very hygienic.. I would love to comeback to a place that you know food handled very well.

Where I'm from in America, I see Mexican cooks preparing Korean food all the time lol. Kind of funny to see it the other way around! Definitely not remotely close to birria, but I'm sure it's delicious and even better than some birria quesadillas out here. Birria isn't all it's cracked up to be as someone who casually ate it growing up. Adobada and carnitas on the other hand... Sign me up!

Yeah, they may not be using goat or lamb meat, but this is pretty damn close. Bro they even put onions cilantro and lime in the consome!

For anyone looking to copy this, I 100% approve with one exception. You dont need that much of the oil, you can simply dip the tortilla in the oil ajd let the excess drip off.
