Hawaiian dude here and learned how to make menudo when I lived in Fresno in 2001, I've pretty much mastered it and I cook it for my family in Hawaii everytime I go back, they can't get enough of it. The Mexican way of cooking tripe is superior to any other imo.

I'm a gringo who has loved menudo since the 1980s. My wife, then girlfriend from the Philippines ordered some steak tacos while I ordered menudo and she barely ate the tacos. She asked for a spoon and would not stop eating from my bowl. Every Filipino who tries menudo loves it. They have a delicious tripe stew there in the Philippines called Goto but I think they love menudo even more. Those pork tamales look incredible also.

Tejano here. My baby makes me Menudo with the honeycomb panza only, cleans and chops it up really small pieces. Of course the spices and pozole. It cooks from 5am to 12 noon. Hot fresh made tortillas de maiz from the corner tortilleria. Pico de gallo fresh chopped, chile tomatillo, of course guacamole pa' los tortillitas. Limon, cilantro, cebollita, & butter for the tortillas as well (it's Texas y'all). The little panzita de honeycomb is so tender, it disintegrates in your mouth after 2 chews. The caldito is so spicy hot it makes you start sweating on your scalp, Wow, its a feast if flavor and love. It makes me regret all the "bad" Menudo I've eaten in the past. All that thick greasy-azz panza, cut up into huge chunks like your eating sabanas de graza. Nope, not anymore. Good Menudo is king!

Not in high pressure cooker pot,cooks to fast losses flavor,hoyya menudera y tamalera taste better slowly cooking is better.
