Amazingly Easy crispy duck, plum sauce and pancakes

FULL RECIPE
Crispy Duck
1 tbsp honey
2 tsp Chinese five-spice powder
Half duck
Preheat the oven to Gas Mark 3 165C/325F. Take a large roasting tin and place a wire rack inside.
Trim the fat from around the parsons nose
Score the skin of the duck in a criss-cross pattern (breast side) with a sharp knife.
Season with five spice and place the duck on the rack in the roasting tin.
Place in the oven for 3 to 3 ½ hours. Turn the duck over every hour
After the duck has cooked for 3hours, take it out of the oven and turn the oven temperature up to Gas Mark 6 200C/400F
Turn the duck so that it’s breast-side-up again and spoon honey & 5 spice over the top of the duck
Place back in the oven for 20 minutes until the glaze has gone dark brown and caramelised.
Take the duck out of the oven. Leave to rest for 10 minutes, then place on a large plate and shred all the meat using two forks.
Plum sauce:
1 tbsp vegetable oil
1 red onion peeled and chopped
1 tbs stem ginger in syrup (or 1 tsp root ginger grated)
6 cloves garlic minced
600 g ripe plums de-stoned and cut into small (1 cm pieces) - no need to take the skin off
6 tbsp dark soy sauce
4 tbsp muscovado sugar
1 tbsp white wine vinegar
1 tsp 5 spice
1 chilli
Heat the oil in a medium sized sauce pan.
Add the onion, garlic & chilli and sauté on low for 5 mins
Add in the rest of the ingredients, turn up the heat and bring to a gentle bubble. Turn the heat back down and allow everything to simmer for 20 minutes. Give it a stir every so often.
After 20 minutes, turn off the heat and blend the mixture in the pan using a hand blender.
Pancakes
300g plain flour
Rapeseed oil, for brushing
While the sauce is cooking, put the flour, 250ml boiling water and a pinch of salt in a bowl and mix together until it forms a dough. When cool enough to handle, knead until smooth. Divide it into 12 - 15 balls and roll each one out as thin as you can. Brush a frying pan with the oil and cook each pancake over a medium heat for 30 secs each side or until cooked but not browned.

    I do make both flour & corn tortillas. My flour tortillas have a slightly different recipe but I suspect that's just my preference!

    I want a farm so badly! ... I'm much too old now, but we had farmers in the family. Loved going to the farms. I don't want to drive a tractor as they do on real farms. I want a mini-farm with chickens and geese... Oh! I'm going to have to trap a duck someplace for that recipe.

    Parson`s nose, you say? We called it "the part that goes over the fence last". I loved that tail meat. That, and the wings are the best for snacking. Chicken, duck, wild game birds or turkey, doesn`t matter.

    Not just a great duck recipe but cooking tips galore. I find commercial plum sauce somewhat lacking. I appreciate the recipe. Only, it's winter here, so I might not be able find fresh plums.     Hello Hugh, I love how you tease Fiona in this video. “If you’re Fiona... you like more filling than pancake” lol. Are you left handed? I can’t tell as most of the time you’re using your left hand then you use your right hand every so often. Hugh you’re so good at so many things, cooking, DIY, gardening, video making, presenting etc you make it look easy... it give me hope to try. Fiona he is a keeper. 🤫

    Hi Keona, I write right handed but do use my left hand a lot (my father was a leftie). Sometimes whilst filming I have to reach around the camera so use whichever hand is easiest! Happy New Year! Hugh

    @@EnglishCountryLife hi yeah one I was gonna do would be a sooped up version of the traditional pork and prawns but with shredded slow cooked pork than the usual added when the porks cooled down chopped prawns already cooked added along with finely chopped cabbage,chilli ginger garlic soy sauce oyster sauce (watch the salt levels with the two sauces and seasoning)and sesame oil and finely chopped onions and grated carrots and I think that's it put the mixture in the wrappers cold if your gonna store them freeze them straight away as they stick to plates if left in the fridge I had some disasters lol hope this helped
