ALMOND BISCOTTI (Italian almond biscuits)

In this video I’m taking you back to my childhood, and pretty much every Italian household.
I’m showing you how I make almond biscotti (Italian almond biscuits). This Italian staple is pretty much served all the time when the coffee gets put on.
There are a lot of variations for this recipe, with different shapes and sizes and the additional of dried fruits and spices.
This recipe is one that’s been in my family a long time and has been passed down for generations.
It’s hard to stop at just one. They can be enjoyed on their own as a snack, but I think they’re best served with a coffee.

ALMOND BISCOTTI (Italian Almond Biscuits)
Ingredients (Small batch for 40-45 biscotti)
3 room temperature egg whites
½ cup caster sugar
1 cup all purpose (Plain) flour
350g (12oz) fresh almonds
1 tbsp vanilla extract
Cream of tartar
Method:
1. Preheat oven to 160C/320F fan-forced or 180C/356F conventional/non fan-forced.
2. Beat egg whites until foamy.
3. Add cream of tartar and gradually add sugar a tablespoon at a time every 20-30 seconds.
4. Sift flour into meringue and add almonds.
5. Mix until all ingredients are incorporated and even distributed.
6. Transfer to a loaf baking tin and bake for 45 minutes to an hour until a toothpick inserted comes out and surface is barely or lightly browned. Allow to cool to room temperature.
7. Set oven to 100C/212F fan forced or 120C/248F conventional/non fan-forced.
8. Slice thin strips no thicker than 3-6mm or eighth to ¼ inch thick.
9. Place on tray lined with baking paper and bake for one hour until biscotti is dry, avoiding any colouration.
10. Allow to cool and store in an airtight container, or serve immediately with coffee/tea.

    He did drsclosed the incorrect eggs size he use jumbo size in ingredients list just said 3 eggs but not the size should be about 160 gm eggs white 4/5 large eggs

    Use this correct recipe 4/5 eggs white 120 gm flour 120 gm mind 100 gm caster sugar Oven 180 / 45 minute only then put in freezer half hour o fridge one hour put back in oven for 45 minute on 120 degree

    I would try baking for a little longer, and maybe even let them cool slightly before cutting. Also using a serrated bread knife is best. Don’t give up!

    No it. It he doesn’t explain think correct such the size of eggs this why he was get lot meringue because he used jumbo eggs this is not on the list of ingredients plus he use electric knife to cut biscuit Plus I only get 20 biscuit he state 45 he lie

    A question for the chef How come when I sliced the biscuit the knife not cut the almond and break the cake where is the problem ?

    Hi, thanks for your comment. Sometimes it will break when you cut it and the bread is still warm. Some say it’s best to wait until it cools down.

    Hi, thanks for your comment! Unfortunately whole egg won’t work because you need to make a meringue. The egg yolk will inhibit the silky texture.

    Marianna Gidaro yes I saw her but original recipe is with white only Plus she does have another video where she only uses white eggs only with 3 eggs white 1/2 cup sugar and 1 cup flour and 1/2 cup almond

    Hi Angie, cream of tartar helps stabilise the egg whites for the meringue. It’s not absolutely essential, but does help. As a replacement, you can also use a squeeze of lemon juice 🙂

    I knew you must use large jumbo eggs white then us because you only mention 3 eggs but not the size or quantity of white Plus 350 gm almond are too much for three normal eggs but ok for jumbo white eggs

    Up date you recipe how much eggs white you actually use ? Why no state that your use jumbo size eggs And that 350 gr of almond are too much for 3 normal eggs But because you use without tell people jumbo eggs plus what size tin you use this why you biscuit come more high

    For three normal size eggs large should be use 120 gm but because this chief use jumbo size eggs that dose are ok for him
