Ingredients:
● 1 kilogram and a half or 3.3 pounds of ground beef
● 1 kilogram and a half or 3.3 pounds of minced pork meat
● 750 ml or 25 fluid ounces of stock beef
● 3 teaspoons of baking soda
● 1 tablespoon of ground pepper
● 5 cloves of smashed garlic
● 2 tablespoons of dried thyme
● 1 tablespoon of salt, careful with the salt because the stock beef is
already salted
● 1 tablespoon of spicy paprika

    ​@@Ketchuporkatsup Thank you for sharing that lovely childhood memory. Both names, "mici" and "mititei," are accurate and still used today, it has nothing to do with the communism regime. The original name was "mici" and "mititei" came about as a diminutive form of "mici," but with the same meaning. It's not a regional distinction, where people from specific areas like Ardeal, for example, may say "mititei" while those from Dobrogea prefer "mici." The usage of these terms varies randomly, although many restaurants have chosen the term "mititei" for a more let's say sophisticated presentation, leaving the "mici" as a colloquial form.

    Thank you. And no, if you refer to a soda of some sort, apple soda or any fruit soda actually, I wouldn't recommend that. Stick to the recipe. The best choice is the beef stock. Especially if you are making the mici from a meat mixture that includes beef.

    It's mustard. Mici are always served with a side of mustard, fresh bread and a nice cold beer.

    I have a question about the paprika, you say AB’s it’s also written spicy paprika. I only find sweet paprika or smoked paprika here in the US, also in Spain and Argentina since I’ve lived in all three countries . But we do have ground cayenne pepper 🌶️ is that what you meant?     Hi! It seems the term “spicy paprika” might be specific to Romania, and I apologize for any confusion. However, you are absolutely right - ground cayenne pepper is an excellent substitute and it will bring a wonderful kick to the recipe. Feel free to use any spicy pepper variant you have on hand, chili powder, chili flakes, cayenne pepper. The key is to add a bit of heat, of course it all depends on personal taste and how much heat you can take, but any of the substitutes will do the job wonderfully.     @@realhelpinthekitchen I made them, I put too much cayenne pepper 🔥🌶️ the thing with raw meat you can’t really taste it. The rest of the flavors were right, everyone loved them. The only thing I noticed when we were cooking them, they swelled then when we removed them from the grill they shrunk. Why is that? Is it the baking soda? Were we supposed to pinch them with a fork? While or before cooking??🤔

    ​@@elianamartin8575 First of all, Happy New Year! So sorry for the late response. Holidays are draining the life out of me LOL. Well, there are a couple of things that could contribute to this. 1. The meat was leaner and the fat percentage was too little. Fat plays a huge role both in the texture of the mici and in the taste. Sadly or happily depending on how people like to see things, a good mici recipe is high in fat. 2. They need to be roasted on all sides but not too long. In case the meat is cooked too long, the mici will lose the juices that make them tender and fluffy. 3. The power of the charcoal barbecue or grill might have been either too strong or too weak. Mici are perfectly cooked at a medium constant temperature. Rapidly cooking the mici at high temperatures may cause them to lose more moisture quicker = shrink and dry. 4. They don’t need to be pressed while cooking. This will drain the juice and fat. 5. Overmixing the raw mici paste can lead to a denser texture, and the mici may shrink more noticeably during and after cooking. Don’t be discouraged. I wasn’t exaggerating in the video, making and cooking mici is an art. With a few adjustments, you’ll get the hang of it. Keep experimenting and you'll master the perfect mici in no time.     Some recepies say veal meat, or even lamb meat? Is it also possible? And I've seen some people say they should stay 20 days in the fridge?

    Romanian mici recipes can be as diverse as they come, with popular combos like beef+pork or beef+mutton. While veal or lamb might sound like an interesting choice, their price makes them seem like an extravagance. Their tenderness is more fitting for standalone dishes. Grinding veal would seem wasteful. Pork+mutton is a solid choice too. The beauty of this recipe lies in experimenting; a richer in fat meat, like pork, tends to bring out more flavor. Now, the idea of letting them rest for 20 days? That's a bit much. The meat will spoil in 20 days even if it's ultra-seasoned. I would say the maximum period of resting, refrigerated would be tops 4 days, TOPS. Otherwise, just freeze them, they will still be delicious. There are other meats we make, like pastrami, smoked sausages, ham, that are smoked or dried for a long period, but that is not the case for mici. Maybe that's the 20 days resting period all about. Mici are always made from fresh ground meat, cooked mandatorily on a charcoal barbecue with a touch of mustard and lots of cold beer.

    What's your opinion of the ready-made frozen mici, such as those sold in Romanian food stores in the UK. I bought a brand called Aldis recently.

    If proportions are important, then please note - 1kg of meat is equivalent to 2.2 lbs, not 3.3! That's 50% more meat
