Al-Bustan Fil Bayt: Alex Hernandez of Migrant Kitchen Prepares Pastelon Mashi

We are happy to present our latest Al-Bustan Fil Bayt video by The Migrant Kitchen chef Alex Hernandez. Dorado. Inspired by Palestinian cuisine, Alex created a new fusion with his own Salvadorian recipe, Pastalon Mahshi. Typically the Palestinian dish is comprised of hollowed out and stuffed vegetables (zucchini, squash, eggplant) filled with meat cooked in a a sauce. This recipe features Jackfruit instead and embraces the many beautiful ways in which the Arab diaspora brought various traditions to Latin American and elsewhere, adding to the cuisine, culture, and the arts wherever they found home. Examples of other dishes are pastor Mexico and sfeeha in Brazil.
The Migrant Kitchen partnered with Al-Bustan last year for their Feed the Polls initiative, during which we helped coordinate the distribution of thousands of meals on election day across the city. Founded by Nasser Jaber and Daniel Dorado in October 2019, The Migrant Kitchen was born out of a shared passion for pushing boundaries and for creating delicious, accessible food. Much like Al-Bustan, The Migrant Kitchen was inspired by the diverse stories of America’s immigrant communities. Nasser and Daniel and this video represent the wonderful things that we can create together when we share and respect each others cultures in the kitchen and beyond.
