AIR FRYER NO KNEAD BREAD
Crunchy on the outside but soft on the inside. This recipe is a NO KNEAD method and ferment the dough in the fridge for 18hours. Cold temperature delays the fermentation of the dough up to 48 hours. During this process, the yeast produces flavorful complex resulted to tastier bread.

    I had to reduced the amount of water due to 80% humidity in my country (Malaysia) and also the flour. I had 160g water for the same amount of flour. Anyway, thank you for the recipe and its my first time baking with air fryer. Goes very well. Thank you.

    I prefer my artisan bread at 75% hydration, so I dropped the water down to 169 gms., delicious with a nice open crumb... thanks for sharing.

    I got not long-ago glass door (not french door) air fryer. My 1st bread into a ceramic loaf pan did not turn out well. The bottom was raw, and the top is brown. Only tin bakeware good. I do 1lbs brad in it, from 500gr Montana all purpose, non gmo flour, 1/2 tsp sugar,1 tsp kosher salt, 2 flat tsp yeast, 9 oz water, 2 tbsp extra virgin olive oil. In a bowl I measure the flout, I make a hole into the middle, I put into the middle the sugar & yeast, and on the side the salt.I pour part of warm water into the middle, I let it rise. After I pour in the rest of the water, then comes the extra virgin olive oil, mix well, the dough shouldn't stick to the bowl, so I always put in whatever the dough needs, extra water or flour. Then I put it into the non-stick meatloaf pan, and with hands I make the top of the bread wet, or can be melted butter too, I let it rise in it, when it rises to the top, I put it into the air fryer on 315-320F to 35-40 min, until the top of the bread is golden brown. I let it cool on a cooling rack.

    I had a go at making this today.. I only had all purpose flour. Turned out not too bad. Only 2 things I would say. If the mix seems a bit wet( as mine was, ) it seems ok to add a little more flour. Also, probably bread flour makes the texture lighter, but I was impressed that this cold fermenting works! Particularly as my kitchen has no where to prove in the warm. Will definately have another go using bread flour! Thanks!

    I think bread flour is much better in making a bread. Because it contains more protein and gluten that gives chewy texture, airy texture and needs more time to rise than all purpose flour. Thank you.. 😊

    What is the hydration ratio, it appears to be 85% where as normally bread is 66%. Am I wrong?

    Many thanks, you've inspired me to buy an air fryer! That looks just like the crunchy, extra sourdough bread made by the Toscano's bakery in San Francisco. At 200* C equates to roughly 400* F, correct?

    Hello.. i think instant yeast can be mix directly into the ingredients, while, instant dry yeast, you have to dissolve it with warm water and activate it for 5 mins or until foamy. Thank you

    ​@@LeneysKitchenNo. Instant yeast you add straight to the dough. Active yeast is the one that is usually pre activated in liquid before adding to dry ingredients. Both use different temps to activate. Active yeast is lower by 10-20°C.

    can use pizza stone for baking this bread in air fryer? if we don't put anything under our dough, the bottom of bread is undercooked

    in my recipe, i preheated my air fryer together with the baking pan. then place the bread dough inside the pan and cover it with foil. preheating the pan helped to achieved the crusty textures of the bread especially the bottom. thank you

    I did not see what you put into your hand then into the dough after you had taken it out of the mixing bowl just before you put iy on the board with circles on it? Found at 1:58 min into the clip.

    Hello. Dissolve sugar in a warm milk or water (110 deg), then add the yeast. Activate for at least 5 mins. Cover with towel or put it in a microwave(off)

    anyone got any tips Why i cannot get mine to be so crispy , i get the brownness on top but its just not that cripy , and i am now on my 15th try , i have follow the instruction to the letter , could iiit be the flour we can only get here ???? someone please advise .thank you

    Hello.. have you preheated the airfryer together with the baking pan? This bread is like an artisan stylr, and need that baking pan is extremely heat to came out crispy on the outside even at bottom of the bread.

    @@LeneysKitchen thank you so much for the reply , yes pre heat i follow exactly that on your thread , its a new air fryer , i just feel it maybe the flower but cannot prove it, i was brought up on crisspy bread , as i have retired to the philippines and good bread is hard to come by unless you make it your self , every time i see the 1st 10 seconds of your link of jutting the bread i just have to try to make again , just hoping to get it likeee your be a dream come true , pls advise if you have any other suggestions to make my like your , thank you

    Hello.. i think because of the fan that circulates inside the airfryer. It is also similar with convection oven, but the hot air in the air ftyer are much more quickly circulating inside, allowing the food to cook faster, and turn our food crispier. With this bread recipe, at first, i covered it with the foil, to prevent the bread from burning and uncooked bread.. thank you

    @@LeneysKitchen Thanks for the quick reply. What u said is true, but I made dinner rolls the other day and the bottom did not brown, although, they were cooked through and through. Your bread looks awesome ! I am gonna try making it. I have made the Artisan no knead bread before but in an oven.

    Hello sorry for the late reply. You can substitute it with wheat flour, but add more water or reduce flour. Wheat flour absorbs more water and resulting dense texture

    Hello.. i suggested to preheat it for at least 20 mins, since i baked an artisan bread style that needs a high temperature to achieved a golden crust outside and also, i used an ordinary baking pan instead of cast iron bread pan that helps for crunchy crust and edges of the bread, that's the reason why isuggested to preheated the airfryer before baking the bread..

    Tienes razon, la hice igual a esta receta; y me quedo mal, no se hizo el pan asi; 1 hora en air fryer; y 1 hora en horno; y quedo con demasiada humedad; y no levanto la masa. Esta receta no es muy buena, dudo de ese 1/4 de levadura tambien.

    Normally a no knead bread is always baked in a preheated cast iron cocotte in the oven so it is logical to preheat the fryer’s basket when an air fryer is used as substitute for a Dutch Oven! It’s an excellent methodology.

    Yes, but why though? There's so much fuss about no-knead bread, but it involves all the time and mess of kneading. And cooking it is so faffy: put dough into same-sized bowl, wait 1.5h, heat your bread tin in air-fryer, transfer, cook covered, cook uncovered... I could buy 20 loaves like that, with the amount of time spent cooking that one loaf. Or I could put the ingredients into the breadmaker and press 'Start'. Or I could even just make regular kneaded bread and cook it in a regular oven, with dough left in the fridge a few days to get that texture if I want it. What does this way give me?

    Hello.. thank you for watching.. what could this video give you? Learnings and experiences in making your bread, instead of buying it. I think, it will enhance and boost your confidence, and be proud to your self also, that you could do it, just like others did.. anyway, making bread and cooking requires patience.. but if you like to buy it in the market, then its your choice anyway.. this content is just an optional and ideas that i could share to everybody. Because i wanted to share what i have learned, and maybe, there are some people out there, looking and baking their their own bread instead of buying.. 😊

I was questioning the benefit of the technique: the benefit of cooking the bread in an air fryer as opposed to an oven or breadmaker; and whether 'no knead' is actually the benefit it purports to be. 🙂

    Hello.. its alright.. thank you for watching. The process made the bread more crispier than making it to the oven. Cold fermentation process is the process which slows the fermentation of the yeast, and gave a savory taste to the bread.. once you made it, you can really smell the yeast flavor.. you need to transfer the dough bowl same size with the pan, because we need to preheat the empty pan for 30mins(i think) to achieved the crispy texture of the bottom..

    You simply can’t compare bread from a bread maker with oven or airfrier bread. The bread maker doesn’t get nearly hot enough to make crusty bread. And not everyone has a bread maker and vice versa.
