Sundried Tomato Pesto Pasta:
(serves 2)
In a vitamix, blend:
- 3/4 cup fresh basil
- 1/2 cup cashews (soaked and drained)
- 1 clove garlic
- the juice of 1/2 a lemon
- 1/2 tsp pink salt
- 1/4 tsp pepper
- 1 cup sundried tomatoes
- 2 tbsp olive oil
In a pot, cook:
- 250g pasta
Mix pasta & pesto together, serve in bowls with extra sundried tomatoes on top (if desired)
Ramen:
(serves 1)
Broth:
In a saucepan, fry:
- 1/4 cup chopped spring onions
- 3 cloves garlic
in:
- 3 tbsp sesame oil
Add:
- 1 1/2 cups water
- 1 tbsp soy sauce
- 1/2 tbsp veggie stock
- 1/2 tsp salt
- 1/4 tsp pepper
and simmer for 10-15 minutes before pouring into a blender with:
- 1/4 cup cashews
blend until smooth.
Veggies:
- 3 spring onions
- 1 bunch broccolini
- 3 brussel sprouts
chopped and roasted in sesame oil and soy sauce for 15-20 minutes at 180 degrees celcius
Smokey Black Bean Chilli:
(serves 1-2)
In a pot, fry:
- 1/4 cup spring onions
- 2 cloves garlic, chopped
- 1/4 tsp chilli flakes
in:
- 1 1/2 tbsp olive oil
Add:
- 1 can black beans (rinsed and drained)
- 1/2 cup passata
- 2 tsp liquid smoke
- 2 tbsp nutritional yeast
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tsp smoked paprika
Serve with:
- cooked rice
- coconut yoghurt (I recommend Cocobella)
- fresh coriander
Falafel Plate:
(serves 1)
(Bake falafels as per packet instructions)
In a pot, boil:
- 1/2 cup quinoa
- 1 cup water
as per packet instructions, before adding:
- 1 tsp fresh parsley
- 1 tsp fresh coriander
- pinch of salt
- pinch of pepper
- 1 tsp onion powder
Greens:
- 1 small cucumber
- small handful spinach
- 1/2 head cos lettuce
Chop finely and put on plate
Tahini Dressing:
- 2 heaped tbsp tahini
- 3 tbsp maple syrup
- juice of 1 lemon
- splash of water
Mix well and drizzle as desired on falafel plate
(Serve with hummus and hemp seeds, if desired)
Sweet Potato and Chickpea Curry:
(serves 2)
In a pot, fry:
- 3 cloves of garlic, chopped
in:
- 2 tbsp olive oil
before adding:
- 400ml coconut cream
- 1/4 cup water
- 1 medium sweet potato, chopped
- 1 tsp onion powder
- 1 tsp yellow curry powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp tomato paste
Simmer for 20 minutes, before adding:
- 1 can chickpeas, drained
Serve with:
- cooked rice
- coconut yoghurt
- coriander
Burrito Bowl:
(serves 1)
Cauliflower:
In a bowl, coat:
- 1/2 head cauliflower (chopped into florets)
in:
- 2 tbsp olive oil
- 2 tbsp nutritional yeast
- 1 tbsp buckwheat flour
- pinch of salt
- pinch of pepper
- 1 tsp onion powder
- 2 tsp smoked paprika
Bake for 25-30 mins at 180 degrees celcius
Beans:
In a pot, cook:
- 1 tbsp olive oil
- 3/4 cup black beans, rinsed and drained
- pinch of salt
- pinch of pepper
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1/2 tsp liquid smoke
Guacamole:
- 1/2 avocado
- juice of 1/2 a lemon
- pinch of salt
- pinch of pepper
Served with:
- cos lettuce
- cooked rice
- coriander
- coconut yoghurt
Smokey Tempeh Tacos:
(serves 1, sauce makes enough for 3+)
Sauce:
- 1/2 cup soaked cashews
- 1 clove garlic
- 1/4 tsp apple cider vinegar
- 1 tsp onion powder
- 1 1/2 tsp smoked paprika
- 1 tsp nutritional yeast
- pinch of salt
- pinch of pepper
- 1/2 cup water
Blended in a Vitamix until smooth
Tempeh:
- 1/4 block Hero Foods soy tempeh
coated in:
- 1 tbsp olive oil
- 1/2 tsp liquid smoke
- pinch of salt
- pinch of pepper
and baked for 15 mins at 180 degrees celcius
Served on:
- 3 gluten free tortillas
with:
- guacamole
- salsa
- cos lettuce
- coriander
- lime

I am absolutely the opposite when it comes to quinoa! I could eat it plain as I love it's nutty flavour :D Having said that, there are two things you can do to make it tastier: 1. toasting it in a dry pan before cooking- removes the bitterness and enhances the nuttiness 2. rinsing it before cooking to get rid of the saponins which cause the bitterness of the quinoa (plus, here you also enhance the bioavailability of other nutrients!)

I love how balanced, healthy, yet so satisfying your meals are. One can really tell that you have such a great relationship with food which is soo rare in society nowdays. I just posted a vegan what I eat in a week video on my channel as well. Feel free to check it out for some more inspiration
I know what you mean about quinoa needing more flavor. I always cook quinoa in veg broth to steep all that yummy flavor in as a base. The smoky black bean chili reminds me of a Brazilian dish called Fejuada, which is black beans and pork stew, I make with vegan sausage since I don't like the smoky flavor!

Great vegan food recipe ideas and what you eat in a week video. I definitely will have to try those recipes because I always like to try new recipes to become more adventurous in the kitchen which I certainly have been since being vegan whole foods plant based.

For ramen, you can add seaweed, kelp and bean curd skin

That is awesome! 😊 My two cents is to not be hard on yourself if you falter with your plans along the way. Easier said than done, I know. You may get enough blind judgment or unsolicited remarks from family or friends as it is and choosing to change your eating habits and lifestyle for the better is life changing. I used to get remarks from family and calmly replying slowly diminishes those comments, sharing how good I feel and they can see how much more healthier I look. My family has become more health conscious now, too. My dad even shares his own findings with me and makes his own kombucha! You will set a great example of what an open mind and kind heart can do. ❤️

I think it is important, to know and remind yourself why are you trying to be vegan. Either health reasons, animal cruelty or environment issues, if you don't see an aim, it is hard to keep the diet I think! And it is totally okay to slack some time! No need to be perfect💛
I love your videos:) can you share what kind of vitamix you are using and if you are happy with it? My blender died last weekend and I think about investing in a vitamix next:)

Hey Amanda! I am OBSESSED with your videos🙌🏻 Wanted to say that I recommend using a chickpea, brown rice, lentil, or mung bean pasta just because the corn flour in the generic gf pasta is super processed causing inflammation especially in the skin! Lots of love🤍🙌🏻

I love Ramen! Here is summer and I eat Ramen anyway 😂 In fact I have an uploaded ramen recipe on my channel and I uploaded it when summer started, but it was worth it because it is super delicious 😍

Love these recipes! I need to try them all, especially the ramen! Quick note: you are not supposed to cook nutritional yeast as it destroys all of the good stuff! Just mix it into the food after it is off the stove or oven. I don't want you to lose your B12!
I feel like soaking the cashews before putting them in all of these dishes would make them next level good

If you use sundried tomatoes from a jar you can use the oil from the jar instead of using a separate olive oil to make the pesto even better and reduce waste :)

I love how you also don't like or at least don't use regular onions. I dislike onions myself except I replace them with leek in my cooking instead of spring onions 😀

Hey Amanda, soy sauce generally has wheat/gluten in it, so consider going for tamari (just make sure it’s gluten free, some tamari have gluten)

I love burrito bowls, I’m having to eat foods that don’t have to much spices, and anything else that triggers pain at the moment so it’s a bit boring and not much flavour. Just waiting for my stomach ulcer to heal

Not vegan but I find preparing meat to be so mf annoying so basically I haven’t eaten meat in about a month! Somehow my FBI agents must have found out because they are non stop recommending vegan what I eat in a weeks. I appreciate it.
