Tip: I’ve baked homemade bread for 50 years. Milled wheat berries in a flour mill. Your dough was wet because the wheat flour wasn’t finely ground. So when you try this again. Either have a friend with a flour mill fine grind wheat flour for you or buy it already ground. And knead the dough long until smooth elastic. Let raise. Punch down. Let raise again. Punch down. Shape. Raise again to nearly double. Bake. Remove to rack to cool. For your first attempt. You did good.

Instead of turning the oven on, you can just turn the oven light on and put your rising dough in the oven! It keeps it warm (but not hot) without using as much energy!

If you have a kitchenaid mixer, you can get a wheat grinder for that. I use hard red wheat for my sourdough. But I also only do about 30% of the fresh ground wheat- I do the rest of the flour in there as just organic bread flour. The great thing about wheat berries is they store easily for a long time, like 10 years!

I have a delicious and super easy bread recipe. I substitute half the flour for whole wheat flour and add pumpkin seeds, poppy seeds, Italian seasoning, sunflower seeds - whatever I’m in the mood for. It’s also a super wet dough, it would be impossible to knead 😅 you just stir it up and let it rise and then it gets baked in a Dutch oven. Best bread recipe I’ve ever tried. Just wanted to share that so anyone who ends up with a wet dough doesn’t lose hope hahaha. It can still turn out amazing

I learned how to make bread as a young teenager. That bread needed more flour and you need to knead it with your hands until its very elastic or stretchy. About 15 min probably. Then let it rise until double then put in loaf pan then let rise again then bake it. Also put a teaspoon of the honey into the yeast water. The yeast should rise and be all bubbly. Hope this helps. 😁

I haven’t been at Pa farm show in probably 20 years and it’s still the same ! Thanks gave me so many home vibes 😊I grew up and lived an hour north of Harrisburg (lewisburg area ) for forty + years before moving to Mo . Yep Pa is still home to me ❤I would think butter would work as well as shortening, it’s to make the bread soft , and the honey or sugar helps the yeast work .I think the flour would soak more liquid if the berries were ground finer then you need to knead it until the gluten develops, you should be able to stretch it until you can see through it ( window pane test ) Now I’m anxious to try to grind berries , I bake two loaves of sourdough every week for our family of three and my daughters young family . Nothing like homemade bread !

It's been my experience that home-ground whole wheat generally needs longer rise times. (Moisture for 1st rise was fine...whole wheat will absorb more moisture.) Then it needs more flour and kneading (til elastic) before its baked (I usually do a 2nd rise in pan as well). Plus, a slit on top of loaf with sharp knife tip before baking will help let loaf expand more in oven. Best wishes on 2nd try!

You certainly fit a lot into a week! Your loaf looked good and tasty and grinding your own flour makes it more nutritious because the berries contain wheatgerm which is removed from commercial flour. I would only grind as much as I'm intending to use as the wheatgerm makes it go rancid quite quickly. Kneading to develop the gluten would make the bread lighter but it takes up time and you're already so busy!. You could add much less yeast and allow it to rise overnight which would allow a long time fot the gluten to develop by itself. You could also get a mixer with dough hooks to knead for you, it just depends how much bread making you think you'll do in the future. I agree with your friends that showering is a chore and I much prefer baths!

Megan, this was a great video! I wonder if you’ve adapted your bread recipe since, but I was thinking your bread may have needed to rise a bit more after shaping. The honey is also helpful to allow the yeast to do its job and rise. You find that more with whole wheat recipes. ❤ I’m glad it tasted great anyway! Bread is very forgiving that way 🥰

  • @darraenfinger3782

Perhaps because the whole wheat flour was not as fine as the commercial stuff it didn't absorb the liquids as assumed in the recipe. No problem. Kneed longer with white flour. And rise a little longer. 🙂

Freshly milled flour takes a while to absorb the liquid. Your doing a great job!!Freeze your left over freshly ground wheat berries bc they will sour if not put in the freezer from all the natural oils on wheat berries. Can’t beat the nutrition from homemade bread with freshly milled flour! God made wheat berries with so much nutrition that we can only get from them. It’s pretty neat!!

Don’t be scared to add more flour if your dough is sticky. Weather makes a difference with how much flour is needed, some days more and some days less . Also your dough needs to rise again after it’s put in your bread pan. Why do cooks think we know how to do it? 🤩 recipes need detailed instructions! I purchased a used mill and it’s been fun learning to make bread. Fresh ground berries smell so so good!

Wow Megan, that was fun to watch! So many things. I loved the thrifting. I live in Boise Idaho and I'm not sure if we have any thrift stores that look remotely like yours! The ones I've seen are kind of junky lol. I always want to drink an iced coffee with you - you are a first-class barista! Also, I think you should remake your bread but vary your technique a bit. IMHO you should knead the bread immediately after stirring the ingredients together, before the first rise. Do you have a Kitchen Air or other electric mixer? If so use the bread hook and knead it for about 5-7 minutes or until it begins to look slightly elastic. (if no electric mixer, roll up those sleeves girl!) Then melt a bit of your coconut oil in a clean glass bowl, cover your bread with that oil, and leave in the same spot to rise with the towel over it. Once it has at least doubled in size, maybe 1 1/2 hrs., punch it down, form it into a loaf like you did, but then let it rise again until it has formed into a more "loaf" shape. Bake from that point. Oh and if you can, grind your flour with a machine made for that or just buy it ready-ground. Can't wait to see your next beautiful loaf! Blessings to you and your lovely family.

Look up Jovial's dry sourdough starter method on The Elliott Homestead blog or youtube. It saves you all that "babying". My starter sits in my cheese drawer in the fridge and it's been there for a few months since the last time I made sourdough tortillas. You pinch off some, reconstitute it to make the bubbly starter as you need it for recipes. It takes planning of course but you are not wasting any starter or having to feed it at all. ;) That is exhausting!
