On my stovetop, it works well to get the rice and water on a low boil, then switch the stove to low and don’t touch it for 12 minutes. Then take it off the heat and let it rest for 10 mins, turn it over, and boom, perfect rice.

Hi Imamu, this method of cooking rice ( without the corn etc add ins) is how I was taught to cook rice by a Japsnese teacher who came and lived with us for a year way back about 20 - 25 years ago now. I've been doing g it the same way ever since. I always do it on the stove in a pot. I love short grained rice the best! If your bread was still even a little warm it is harder to slice as yours was. Let it cool all the way first and you'll find it easier.
@teenshii
Жыл бұрын
Hi, might I ask what kind of short grained rice you use? :)
@Kairibeachga
Жыл бұрын
@@teenshii hey can I reccomend to you to try a good one vs something cheaper like nishiki. I reccomend sekka rice, it is really good quality and for a 20lb bag where I live it is about 25$ it really goes a long way and the taste of this rice is the best one I have tried so far. Nishiki is okay if you're on a tight budget, but if you're wanting better quality fluffy flavourful rice I reccomend it. It doesn't have crappy grains either

That's so true tho! 🤣 Mom trained us to eat chilli since we were kids. "You don't have to like it, but you have to be able to eat spicy as Indonesians. Most dishes are spicy, and you don't want to limit your options when you grow up." God bless her, she was right! Haha...

this is indeed very true lmao. once ive ever cook something less-spiced, and my mom was like, "tHAT'S NOT ENOUGH SPICE. I CAN'T TASTE ANYTHING." then proceeds to put all the remaining pepper in the sachet. and it tastes amazing.

Hi Imamu, I have been using cast iron for years and the issue was that you didn't season the iron first (even if it comes pre-seasoned, you should still season it). You want to coat the entire pan in a high heat oil and put it in a pan in the oven with the temperature at 350 degrees F (176.6 degrees C) for about 2-3 hours. Then, turn the oven off, let the pan naturally cool, and then take it out of the oven. Wipe off any excess oil. Another thing is that cast iron gets hot very quickly, so you may need to use a slightly lower temperature for things like dumplings, etc. to prevent them from sticking.
@clairecakes9860

Question: what is considered a high heat oil?
@alexandriasorensen9064
Жыл бұрын
@@clairecakes9860 High smoking point, they can handle higher temps basically. Canola is a good cheap option but sesame and peanut are also good choices.
Those cod cutlets with the corn rice would be so delicious together! I'm going to make it. Thank you for putting the time and energy into making your videos always makes my day.
I can give you a tip on the gyoza as a fellow cast iron user: baking paper at the bottom of the pan, works like a charm! It is like you cannot season a pan well enough to withstand that level of stickiness.
@NEMO-NEMO

@Elin Such a great tip. Here in the US we call it parchment paper. It comes in circles for the use of cake pan easy release, but your tip is genius!! I use my cast iron pans specially for meats except fish, and as a result the pan always has a residue smell of meat. I wanted so much to make my pies in my shallow 21/2” deep 10” round cast iron pan but when I baked a pie in it, the crust tasted like gamely meaty iron. Ugh! Any ideas? Do you think the parchment paper idea would help with the smell? Thank you
@ellalella1
Жыл бұрын
@@NEMO-NEMO I don't know for sure but it might work. I have made sponge cake in a cast iron pan with parchment paper in it when that was the only pan I had with roughly the right size for the recipe and it worked well. The parchment paper works for any frying where you don't move around the things too much, then you risk tearing the paper. Gyoza was the thing that made me desperate enough to try just anything and afterwards I have used it for other similar stuff.

I came looking for this comment, to save me the effort of typing it myself. I use baking paper for anything sticky or that has a sweet marinade.....heaps easier than cleaning the pan later.

When you use the baking paper on the bottom can you still achieve the crispy bottoms on the gyoza?

@@GrowGlow Yes, no problem.
One tip for your bread is to let it cool completely before cutting it (not sure if you did or not, so I thought I'd mention it). Also, with a tall loaf like that, you can cut halfway down, then flip the loaf over, and start over from the bottom (which is now the top) and cut straight down, meeting your other cut. This way, the bread won't "droop" like it did. Hope these tips help with your bread. 🙂
I made the corn rice, beef-filled omelet and fish cutlets today. Turned out really delicious! Trying to make every dish Imamu-san cooked every time I cook also gives me motivation to cook again, which I lost a couple days ago. Thank you, Imamu-san!

The amount of effort Imamu puts into her cooking just goes to show how much she loves her family, it's so wholesome
I had the same experience of getting tired of nonstick pans wearing out, and switched to a cast iron. Even pre-seasoned ones need a gentle hand wash and some seasoning before first use, and then it takes a few rounds of cooking with fats and oils for it to get really non-stick. I used it as an excuse to eat a lot of bacon and fried chicken cutlets.
Hooray we survived another week!
The fish cutlets looked delicious (and your husband must have thought they were if he wanted another one)!

I hope Zojirushi sponsor you some day! I bought one of their rice cookers just because I love the song it plays in your videos, and my gosh, I've never had such delicious rice before. Thank you so much for the tip about washing in a different bowl! I didn't even think about that, I really want to take care of the whole rice cooker to get as much use out of it as possible :D
I agree with the love for the smell of Sesame seeds. Especially when roasted. I have to keep a wooden spoon on hand when I make roasted sesame to smack my dads hand cause he tries to swipe them. I recommend making a roasted sesame sauce to drizzle over boiled asparagus. It is amazing
Your daughter is getting so big! Thank you for sharing another week with us! 💖
Your husband loved that sandwich! It’s so sweet to see him enjoy the food you so lovingly make.
I've tried your corn rice recipe before when I was in charge of getting rice ready for dinner and it was so good that I even eat it on its own when there were leftovers HAHA thank you so much imamu 🥰❤️ Now during the times we get corn, instead of being confused about what to cook, I immediately think of corn rice 😼

Let me help: Home made bread, is more delicate than store-bought. So as a result, after baking it needs a good 6-8 to set the crumb. Unless of course you are making sourdough bread, in which case it sets in about an hour. If the bread contains butter, it needs the 6-8 hours to set the butter back to a more solid state resulting in a tighter crumb. I hope this helps.

Hooray for surviving another week! These meals look so delicious! I have a tip you could try for your homemade bread! Try putting it in the freezer for half an hour, and it makes it easier to saw through with a bread knife :)
I grew up on homemade bread and bread machine bread, so I learned a few tricks over time. The first is that you really do need to let the bread rest for a least a couple of hours before trying to slice it - Mom would usually make it the night before to enjoy in the morning. The second is that even after resting, homemade bread will always have a softer crumb, so something like an electric knife makes a big difference in preventing tearing. But if you don't make bread regularly, it's not that good of an investment. Letting the bread cool completely, though, that's the most important.
It’s been a joy watching you live and cook and care for your little family. Thank you for sharing as I’ve watched for a few years now and I really enjoy seeing how much your daughter has been growing up too. I wish I was as good at using so much fresh ingredients as you are. My produce is never that pretty.

Honestly, this is my favorite KZread channel. I love your content so much and I'm always learning something from it. My partner is very picky, so I'd never be able to do these for him (even tho I'd love to). But seeing Japanese food for what it is - instead of whatever is on tv or in restaurants - is beautiful. And don't downplay yourself about it: japanese food is what is cooked at home by the mothers and wives of the country, not chefs who have perfected the craft of cooking. There's nothing more authentic than what you make each day 🤍
Your videos are so comforting and I literally love your recipes!Thank you so much imamu🥺❤

Hi Imamu! Hope youre having a good day, that method of cooking rice is how we do it in Mexico, just we dont soak the rice the night before, we just rince it well, my mom has a pot thats 25 years old that is use just for rice cooking, the only diference is that we usually sitr fry some onion and garlic with the uncooked rice, then add the water, salt and chicken cube and we let it for 15 minutes insted of 13, im actually cooking Corn rice or Arroz con elotitos for todays meal!
Cooking for my hubby your recepies are perfect, I can mix them with my Mexican mom recepies and homemade japenese dishes for the family ❤️ Thank you dear
