I adore caponato. My father-in-law, who was from Trapani, used to make it with exactly the same ingredients and with chopped green beans. Delicious.

Looks absolutely amazing, gorgeous colors! Even my husband, who is a real meat-osaurus, said we need to try that... then he asked if you can have grilled meat with it.. 🙄🦖 It will be a trial and error this summer!

That eggplant had no seeds inside. Wish I could pick ones without seeds !

Ciao ! Look for firm ones that when you press the skin it springs back , they need to be shiny and dark in colour not pale. Also buy them on the day you want to cook them not a week before. Hope that helps 🤗
