    Make your simple syrup with honey instead of sugar. Same principle, either 2 parts honey to 1 part water or 1 part honey to 1 part water.

    I may have to try this 1! Is añejo OK, it's all that I generally buy?

    I find it interesting that he specifically says it’s to be made with blanco Tequila. I think an Añejo will alter the taste profile and I generally consider it a waste to use a good Añejo in a cocktail. But try it and compare. Maybe an Añejo might work especially with the smoked paprika. Or maybe even a mezcal.

    Yes and it’s made with honey and smoked paprika. I think those two ingredients will change the flavor profile just enough to make it interesting.
