Samoan umu making is the best in my opinion, I respect every other way of how our poly family does it, taros and breadfruit or any other source of starch won't come out soggy, baked perfectly and the meat especially the small pig or Suze two in general will be crispy and moist...

It would be nice to see the usage of banana leaves for wrapping everything rather then foil.We in Aus use foils because there is not enough banana leaves!Nothing beat the smell of the banana leaves and also it’s environmentally better

Learned something new. So yes, it does make sense to use the steel rather than the rocks. The rocks will have a tendency to crumble and disintegrate but steel will practically last forever. Good video which made me hungry.

Since you guys don’t have river rocks like the other islands to do umu how did they do umu in Niue pre missionary/ pre scrap metal? Or did y’all cook a different way?
@LifeOnTheRockNiueIsland

We still do use rocks but not the river ones. They turn powdery after use and we need to keep renewing them. I will put a link back here once I have up a video with using our rocks and how it crumbled and becomes powdery.
