EASY ROASTED VEGETABLES:
Preheat oven to 425F.
Peel 2lb carrots, 1lb parsnips, and 2 large sweet potatoes.
Cut carrots and parsnips in half, then longways into even strips. Cut sweet potato into large bite-size chunks.
Place on a parchment lined baking sheet. Drizzle with olive oil, season with salt, toss to coat, and roast until tender, about 25 minutes depending on size and thickness of veggies.
FESTIVE ROAST CHICKEN - Will add to the blog when I can, but for now:
Ingredients:
Whole young chicken
1 yellow onion, peeled and cut into large chunks
1-2 bulbs of garlic, separated and peeled
1 lemon, cut into wedges
2-3 sprigs of fresh rosemary
dried thyme
salt & pepper
olive oil
DIRECTIONS:
Preheat oven to 350F.
Pat chicken dry and remove any packages/parts from inside the cavity.
Rub the outside with a light coating of olive oil and season with salt and pepper. Sprinkle salt and pepper, to taste, inside the chicken as well.
Stuff the inside of the chicken with half the onion chunks, half the lemon wedges, a few cloves of garlic, one sprig of rosemary, and a dash of dried thyme.
Drizzle olive oil in a large cast iron skillet or other large heavy bottom pan. Place the stuffed chicken in the pan. You can tie the legs with twine if you wish - I don't bother and it's fine - but it will make it prettier, I'm sure.
Place the remaining onion, lemon, garlic, and rosemary in the pan surrounding the chicken and gently toss to coat with oil.
Roast until thickest part of breast registers 165F with a meat thermometer (mine is linked below), about 1.5-2 hours depending on the size of the chicken.
Transfer the chicken to a platter to rest and pour the juices into a pitcher or bowl for serving. Enjoy - and eat those delicious sweet garlic cloves!
MASHED POTATOES:
This is really simple and not a strict recipe. I peel and cut up however many potatoes I think my family will eat, put them in a pot and fill with just enough water to cover. Boil until fork tender, usually about 30 minutes. Drain the water from the potatoes. In the same hot pot, mash potatoes with a potato masher, add milk until desired fluffiness is reached, then add butter, salt, and pepper to taste. That easy. Serve with those delicious juices from the chicken - no extra gravy needed!
