I only noticed this the other day when idly looking at the ingredients for Branston Pickle - it contains Sodium Metabisulphite as a preservative.
This makes me angrier than it should - in part, because my wife is severely allergic to sulphites, so I have to watch out for this sort of thing, but also, because it is fundamentally entirely unnecessary to add sulphites as a preservative, to something that is preserved by pickling.
It's so stupid, and it indicates to me that the manufacturer has lost touch with the heart and soul of the product.

    I don't often go agains the all-knowing Shrimp, but I'm guessing they put the sulfites in for sóme reason that makes sense to them. Rather than some fool going "wait, we've been making preserves for neigh on 100 years now, but haven't we always forgotten the preservatives? Better put some in from now on." If they did, that's stupid. All I'm saying is: I don't knów the reason, but I hope there is a valid one". Shame about his wife. Perhaps contacting the brand will shed some light on it. When Í'm this pissed off at a brand or product, I send them an e-mail about it.

    It looks like the sodium metabisulphite being used as a preservative was specifically in the apple pulp - so, they obviously stored the apple pulp separately for a time before pickling it, hence the apples needing their own preservative. The other sulphite is apparently being used as a colouring rather than a preservative. I checked Branston's website, and assuming it's in date it looks like the recipe has changed, and now no longer has the preservative with the apple pulp - they must store it for less time before pickling it now, I guess? They do still use the Sulphite Ammonia Caramel as a colouring, though.

    Great deductions, though I actually imagine it's rather that the apple pulp is supplied from a bulk supplier that uses sulphites, due to storing and selling such huge quantities.

    Given the current situation I would love to see a video on the myths and falsehoods around ALL food sell by / use by / best before dates. My sister is one of those people who think that eating an onion on april 1st from a bag dated use by end of march will result in food poisoning.

    Good idea. In a nutshell, I would say: 1. Fresh produce: use your judgment; does it look/feel/smell fresh enough? 2. Fresh meat/fish and chilled cooked meat/meals: observe the 'use before' date on the packaging. If the date is getting close and you won't use it, freeze it if you can. the 'smell test' is not a very reliable method for meat. 3. Eggs: good for a week past the best before date at least. Crack them into containers and freeze them if you have more than you can use, or bake cakes (and freeze the cakes if necessary 4. Canned and dry goods - anything with an original expiry date measured in years: generally good for years past the expiry date, as long as the packaging is intact and stored in a stable environment

    @@GigsVT A good use of surplus eggs is to cure them (yolks). Easy enough and they last a very long time. You end up with egg yolks you can grate like hard cheese - amazing on steaks and many other things.

    I've had a similar frustration when it comes to gluten. My former flatmate has coeliac disease and can't eat any gluten. I swear some products they just throw in a bunch of wheat just to mess with people.

    It's a cheap protein, and protein basically flavor enhancer (MSG is glutamate salt). And dairy basically mimics cheese without actually being proper cheese.

    Supermarket own-brand pop is the one that kills me. My wife is a coeliac and had a huge swig of some ginger beer before we looked and it was all glutenous

    Maybe because brands don't all pander to diseases that affect a minority. If you're coeliac, search out gluten-free. Same for the dairy in crisps comment below, another minority ailment. The majority can handle it, so YOU need to search out dairy-free products.

    I thoroughly agree with you. Many many people are now having problems with modern food . Bread isn't given proper time to rise and artificial chemicals are are put in everything even if they are not needed . Fruits are not allowed to ripen naturally resulting in strawberries tasting like cucumbers etc. More people than ever are having allergies to food . More natural food and less tampering is needed I think.

    I agree to making your own but why is everyone complaining about sulfites like it affects more than 1% of the world’s population? That’s fucking retarded pardon my language but it seems people are jumping on the bandwagon just to be a part of something irrelevant in the first place. My commiserations for his partners allergies but Branston didn’t put the product in his house, nor did they spoon feed her the pickle. So why is he so mad? No one lied to him, they didn’t force him to purchase it?

If we put all the allergens a product had on the label of the food we would need MUCH bigger labels, winding me up. The product can be whatever they want to be. I think a big company like Branston has better reasoning than him and a basic recipe!

    @@daygenandrews1321 The issue is that it's unnecessary. The reason we can / preserve things is so they last longer. When they've been properly preserved they don't need additional preservatives. Why put something in to your product that is unnecessary and causes adverse reactions in some people?

    Here, Here, I couldn't agree more. The whole point of pickling is to preserve the object you are pickling, and I don't understand the need for all the chemicals now added to pickles. Mint Sauce is another example. All you need for mint sauce is chopped mint, sugar and vinegar and that how mum used to make it, you don't need stabilisers, flavouring, colouring. I often wonder if all these chemicals the manufacturers add is whats causing the allergies, and cancers, which I don't remember being so rife back in my youth in the 1950's/60's.

    An epic in (almost) four minutes. You made me curious about (ploughman's?) pickles every time I went to the shops. Apparently The English Provender Company remembers how to make chutney. 'Course, you're also making me think about how I'm a lapsed chutney pickler meself. Must dig out the books.

    Looking at a supermarket website, the Meabisulphite has been replaced with " Colour (Sulphite Ammonia Caramel). Never known this kind of chutney not to look dark brown... why add an allergen for colour. seems very silly

    Please could I ask if you have the recipe for the Damson Pickle written down anywhere? The recipes I have found are all what I would call "stone in" pickles where the Damsons are pricked, simmered in sugar, vinegar and (I think) salt over a few days but nothing is said about the stones. How did the person who made that jar deal with the stones? Whenever I have used Damsons in jam making I pulp them and extract the stones by hand with gloves but part of the appeal of that pickle is finding nearly whole fruit. The two varieties of Damson that I have are definitely "cling stone" varieties so cannot be split and de-stoned raw.

    Sulphites really surprised me as firstly being present and secondly being an allergy issue. Didn’t know it was on the 14 ingredients list until literally today. New job, learn stuff. Keep up the good work fella

    Sulphites (and Sulphur dioxide) were, for too long a time, not listed as allergens because there was a notion that only proteins can cause a genuine allergic reaction, but apparently what these chemicals do (or can do) is to denature your own body's proteins in such a way that your immune system recognises them as foreign and triggers a response. Jenny has had a couple of very serious reactions to this stuff, landing up in hospital on a few occasions.

    The problem is that some people's bodies don't seem to give a *?#@×& what is or isn't considered "allergens" by the EU or FDA or god knows who. I'm severely allergic to paprika, bell peppers and especially chili peppers. They are all not listed as allergens. They can even be used for colouring in products where you wouldn't expect them or look for them on the ingredients list in the first place. E.g. in sweet, caramel flavoured microwave popcorn! My body reacts to these allergens (and yes, they are allergens) like someone with coeliac disease reacts to gluten..There might be fewer people with this (my) issue but does that mean our health and our lives are worth less and "our" allergens should be allowed to hide behind hyperonyms/euphemisms such as _"spices"?_ I don't think so. Please forgive my rant and my bad English, but this topic has been annoying me for idk how long... so thanks for raising awareness here, Mr. Shrimp.

    @@AndersGehtsdochauch I agree, I'm allergic to a few things that aren't classed as allergens as well, and the 'allergen listing' thing makes no sense because we have to read all the ingredients anyway just to make sure. It's like they are trying to lure you into a false sense of security. My stuff is mostly in the 'free from' products as well, and all the regular products don't use it because it's not a cheap ingredient.

    Gotta love all the people in this comment section going off on tangents about companies using "unwholesome" food and "chemicals"... There is nothing wrong with the preservatives and flavourings used in almost all modern products, natural ≠ good and unnatural ≠ bad. They keep food viable for longer and are why people are as healthy and prosperous as we are to day. Atomic Shrimp's issue here is that this specific preservative is unnecessary for the product. If this was anything other than a preserved food I'd say that the allergies of a tiny proportion of people shouldn't dictate how food is made for everyone else. But yea, preservatives in a food made to be a preservative is dumb.

    After 30 years working as a food technologist, this issue is easy to explain. Adding sulphates allows the manufacturer to reduce the salt content and make the traffic light labels look heathier.

    I think it's probably simpler in this case - I suspect the sulphite are present because they bought in their apple in bulk preprocessed ranks, preserved with sulphites

    In all fairness, Campden Solution (aka Sodium Metabisulphite) was also invent in the 1920's specifically to preserve fruit and veg, so it may well have been in the original recipe before we moved over to using nitrogen gas.

    Doesn’t it taste slightly different as well? I bought a jar yesterday to keep at work and made a bagel with cheese. I was not tasty at all. I don’t know if the recipe has changed or my tastebuds are too accustomed to the “higher end” chutneys and pickles (including the homemade ones)

    also i think they know that people most likely wont finish a jar of pickle in a few days, but most likely opened jars will sit in fridges for several days or even weeks. so i think they just want to be sure their products wont go off even when opened for a longer period of time

    Mrs. Shrimp might want to steer clear of home made wine. Amateur winemakers often sterilize their glassware, including the bottle by using sodium metabisulfite, also known as Campden tablets. It's the sort of thing that wouldn't be listed on the label.

    Atomic 🍤, I was watching this old video. Is it possible they added the sulfites because they're somehow cheaper than salt, or they're the byproduct of some other manufacturing process the company has, which gives off the sulfites as food waste, that they then use in the pickle as a cost saving alternative? I don't know why I'm so curious about it, but I am a fan of pickled things, so it could be for that reason. By the way, have you ever tried pickled asparagus?

    Sulphites are the worst. Totally agree they are totally unnecessary, like you say a pickle/chutney is a way of preserving in it’s self!

    I agree with you, vinegar is a natural preservative and will keep almost indefinitely, likewise any thing with it in doesn't really need a use by date, I'm still using a bottle of Worcester sauce with a best before date of 2014, nothing wrong with it. Similarly anything with achohol in I had a four year old bottle of Magners cider the other day, it tasted beautiful!

    It is a best before date, referring to this fact it is best served by x date. While there have been little difference since the bb date it is not expiry date. There is a difference.

    After watching some of your videos, I felt like trying some English products. Luckily, everything is available on the internet and therefore I also found a small shop in Bremen that supplied me with marmelade, malt vinegar, biscuits, brown sauce, marmite and pickles.     Since throwing up a cheese and Branston pickle sandwich in 2003 I haven't been able to touch the stuff. A good sharp piccalilli is where it's at. BTW it wasn't the Branston's fault I was sick.

    Is it the same with wine? Why do they add it to wine, it’s not like we keep it long, we buy it and drink it, at least in my house, also wine can be made and kept for quite a long time. Next they will be adding sulphites to vinegar.

    I'm sure there must be ancient jars of Branston to compare against. I get your point, it's supposed to be a pickle. It shouldn't need extra preservatives, especially ones where people can be highly allergic to. They put lactose in many medicines too!

    The big agribiz companies put a lot of chemicals in their products that are not needed. You should see the chemicals they put into many/most of the foods in the U.S. We have also had a big stink over the term "Organic" here. FDA has left a pretty large loophole in that definition. My attitude is if it's really a pickle, why do they have a "use before" date on it"? Typically a year to 2 years, max here. My mother made pickles that easily lasted 5 years without problems. Now, I make my own horseradish sauce using home grown horseradish root, salt, vinegar & my well water. Nothing else. It lasted well over a year in the fridge, and probably would have lasted longer had I not used it all up on meats and sandwiches.

    I once found a jar of elderberry and apple chutney I had made, more than a decade after I made it (it got accidentally put away with the empty jars in a box which went in the attic, and only got opened after a house move) - it was amazing - like fine wine, good chutney only gets better with age. Of course, there is a commercial reason why Branston contains sulphites, it's because they'e buying in their apples in preprocessed form in huge bulk. When you buy apple slurry by the tanker-load, it's going to contain sulphites to inhibit fermentation. Still, that's only a triumph of industrial uniformity over quality.

    AtomicShrimp thats not far from the truth. My father in his younger years used to work in a jam factory the strawberries came shipped in preservatives (possibly sulphites) their natural red colour was stripped to a pure white when they came in. They had to add artificial colouring back in to make up for bleached strawberrys

    Prematurely posted! It lasts a good couple of years. But BEWARE if you are allergic to sulphur, most dried fruit (raisins etc.) are preserved with sulphur in some form, and lots of pickles contain them.

    Interesting. Wonder why this is showing up in a bunch of feeds all of the sudden.I assume this is just a case of being extra safe from the producers perspective. I myself do use sodium metabisulphite in things I make at home (well, alcoholic things) where I want to make sure any living things are dead in it.

    Not to get political, but the EU health guys kept pushing a low shelf life on the label at our old nutbutter factory, our owner wanted it extended like it was in Canada but she was told to adapt the recipe. Sounds exactly the same here! ...to be fair, I thought this video was about the spelling and pronunciation being wrong! ;D

    I would guess it was when Nestle owned them to save money the fruits used are pre mixed with the sulphates before making the Chutney, They are now owned by Mizkan who also own Colmans and Sarsons, so all our traditional British condiments are owned by the Japanese.

    I imagine some commercial pickles might say that too. It's as well to use up a jar of pickle within a month or two of opening, only because of oxidation and surface drying, but properly made pickled products shouldn't need refrigeration (unless there is an aesthetic reason to enjoy them cold)

    Walmart tosses out whole trays of food only minutes after “expiration” instead of marking it down. They would rather the employee throw away everything instead of giving it out for free. I broke the rule and gave out more popcorn chicken than I would like to admit because I hate how wasteful Walmart is. Why don’t people complain more about food waste instead of harmless preservatives that affect 1% of the worlds population?

    I never liked Branston. I always preferred the now long-lost 'Pan Yan' pickle. I just looked in my fridge, and most commercially available pickles and chutneys seem to contain sulphites. The Arran onion chutney does not, but anything with apples or fruit seems to - which says to me that they are using dried fruit in their recipes. Most dried fruit is preserved with sulphites.
