the rule is that there has to be at least 2 players after the player that receives the pass, it doesn't matter if it's the goalkeeper or not, it's just that in most cases the goalkeeper is one of them

Not exactly, the law states that it's offside if the attacker is positioned behind the penultimate defender. For example, if the goalkeeper has gone up for a last corner, and there are 2 defenders left, the attacker must not be behind the first of the two defenders
